Kudokibe Junmai Daiginjo Kuzushi Dewa Sanzan 22%. Memorandum The aroma is subdued. It is clear, yet crisp and dry. The aroma is clear and crisp, but at the same time, it has a gorgeous hint of fragrance as it falls down the throat. The 22% rice polishing ratio of Dewa Tsannin is a luxury, isn't it? Of course it was delicious😍.

Tenmei Aki-agari Nama Jungin The jacket is beautiful. I have nothing but high expectations. After entering the mouth, the umami flavor spreads quickly. The sweetness and acidity are firm. It finishes with a mild astringency. I certainly wanted to drink this with grilled fish 😫. It was so delicious that we couldn't resist and we drank it as a couple 😖.

Nitoshi Junmai Daiginjo Aizan 48 Fire Memorandum This is beautiful. Calm and sweet. The end is spicy. It has a clear yet robust flavor. The 16% content may have contributed to the good balance. As the temperature rises, it becomes mellow and thick. Delicious!

Yokoyama Summer Jungin Summer Limited Junmai Ginjo-shu Memorandum This is my first YOKOYAMA in summer. Slightly carbonated. The taste is quite robust. Moderate sweetness. Creamy. As is typical of summer sake, the last sip is not sticky, but invites you to take another sip. Mm, it's good!

Jikin Junmai Ginjo Asahi Hiire A family birthday celebration. We had sushi for dinner and toasted with this bottle! This is the one I won in the lottery. I think this is the first Jikin with Asahi rice. The aroma is subdued. It has a slow umami, then the sweetness and acidity spread softly, and the spiciness finishes it all off. It is delicious! Let's enjoy it slowly😍.

Amami Junmai Ginjo Since Tenbi has been served, we will have Fujioka Toji's Junmai Ginjo, which we had somehow lost the timing to drink. From the first sip, it has a fresh sweet and sour taste full of fruitiness. It tastes like muscat. It is still delicious. Of course, I also love this season's Amami! It's amazing how sake can make you feel happy (I have no vocabulary 😩 ). New sake has also started to be released. The season rolls around and there is no end in sight 😍.

Amami Junmai Daiginjo Akaban Omachi Rice Memorandum This was also delicious. Sweet, delicious and juicy. It has a clear mouthfeel. The grape-like fruitiness spreads and finishes with a pungent spiciness while retaining a gaseous sensation. Delicious 😋.

Amami Junmai Daiginjo Hiroshima Senbon Nishiki Fresh aroma. There is a tangy fizziness. The sweetness precedes and follows the astringency, passing down the throat in a well-balanced manner. The aftertaste is not long, but it gradually makes you happy. We compared it with Yamadanishiki, and both are delicious. If I had to choose, I would choose Yamadanishiki because of its smoothness 🤔.

Fukkai Yamadanishiki Sparkling Memorandum Refreshing and dry. Fine bubbles dance. The bubbles settle down early, but you can enjoy the fizzy sensation on the tip of the tongue. Fukkai is also a definite winner.

Instrument Masamune FUZZY GREEN Bizen Oumachi Memorandum Family members were infected with corona in turn. I became pneumonia-like and lived in bed for a while. I was away from alcohol for almost two weeks. It's been a while since I've had a drink, but my nose is so inflamed that I can't taste it 😱I only feel the alcohol taste. My wife tasted good right from the start💦. I've been drinking one cup a day for rehabilitation. Finally tasted good on the third day.

Flaxcat PRIVATE LAB Junmai-shu made with white malted rice In early July, our family members were infected with corona. I took a short break from sake wa while I rehabilitated my sense of taste. Since it is Sake Day, I will try to resume it slowly. So here it is. This is my first non-sparkling Flax Cat 🐈‍⬛. It is very light. The acidity is very characteristic. Not sake-like. Modest fruity sweetness. Delicious. But you might want to drink something that feels more like sake😅.

Fukkai Reihou Namaisho, unfiltered unpasteurized sake Sweet aroma. In the mouth, there is a pleasant sourness with a tangy gasiness, and the sweetness remains gradually. There is a slight lactic acidity. There is a slight bitterness at the end. It is delicious! It is easy to drink and goes down smoothly. This is also in a bottle. I think I drank a little too much😅.

TANISEN #FUKKAI Collaboration brew Don't stop #Noto's sake! Collaboration brew sake. It was delicious but I think I preferred the original recipe. Through Fukkai, which I love, I got to know Taniizumi, a brewery that makes delicious sake. I think it is a wonderful initiative. Thank you very much for the food!
