Checking in for 555, so here it is!
This is a 55th anniversary sake from Sato Shoten in Higashi-Koganei.
It is a special junmai NEO Oyama sake that has been laid down at a low temperature in the brewery for about four years. Looking forward to it 😋.
The aroma is modest.
The moment you put it in your mouth, the mild sweetness and umami flavor spreads and goes down your throat smoothly.
It's really easy to drink and tastes great 😍 It's dry with a touch of alcohol, but full of umami.
This would be a great match for oden and nabe dishes 😋.
I drank it tonight from snow-cold to room temperature, but I hear that heated sake is also delicious, so I'm looking forward to it â ma-ki-Good evening, Takechi-san.

The sweetness is moderate when cold. As the temperature rises, it becomes sweet and delicious. Still, it finishes nicely without being sticky.

I saw this for the first time, and I couldn't resist taking it home.
It is made from Yamada Nishiki from Kitakata, Fukushima, milled at a famous rice shop in Tokyo, and brewed back in Fukushima.
The aroma is unique, and the low milling rate of 85% is understandable.
And it is dry. It also has a sense of transparency.
Even when mixed with ori, it still has the same dry mouthfeel. Maybe it is because of the low alcohol content.
The taste is refreshing with low milled rice.
What is the meaning of grinding rice? What is the original taste of rice? What is the umami that sake should boast?

This is a fire-brewed, junmai daiginjo from Kashin.
Gohyakumangoku is a typical Niigata sake.
It has an image of being light, but its soft, firm sweetness and flavor may not be like Ihyakumangoku.
Still, it is refreshingly crisp and easy to drink.
I served it with salted salmon.
It was delicious. In the end, I finished it (my wife drank more than half of it 😅). たけっちSono Shungiku Leap Day Koshin -Special One
This is a bottle that was squeezed on a leap day.
It is fresh and juicy.
You can feel the cleanness of the 29% polished rice on leap day. It has a calm sweetness and a bitter taste with a hint of chrysanthemum.
It is definitely delicious.
This year, I could enjoy this once-every-four-years sake a lot.

It has a well-rounded flavor, probably because it is made with 30% Yamada-Nishiki.

Last season, Shiroginoumi was our favorite nigori sake. We were able to welcome it again this year.
The top clearness.
Fruity sweetness like a fruit.
