A summer-only junmai ginjo from Nakashimaya in Yamaguchi Prefecture. This is the first time I have had Nakashimaya's sake, I was very impressed by the acidity of Nakashimaya's sake. I loved the acidity of Tatenokawa's sake, but it was just as good. I would like to try many other sake from this brewery. I highly recommend it to anyone who likes acidity. Today we had Hakata sesame mackerel style sashimi with various kinds of pickled vegetables and dashimaki with chives (both made by the brewer himself 😉 ) and petit kaisendon, the best marriage 😋.

I took it late, my GW (big holiday?). Cleaned out the cooler at noon 😓💦. I only aim to have fun at night! Sashimi of Japanese Spanish mackerel and chicken grunt that I bought at the market in the morning, along with arajiru (soup) of the fish. I'm going to pair it with Kakusei's Suitori Ki from Kesennuma. A clean air conditioner and a ⚾️T🐯vs G🧌 match! We also had a little early summer vacation🌻 with summer sake. ...the fish flavor goes well with this sour and sharp Kesennuma sake 😉👍.

Morohaku in my hometown, Itami! Do you know, Itami Morohaku has become a Japanese cultural heritage? Itami Morohaku is a Japanese cultural heritage site. For more information, please visit https://japan-heritage.bunka.go.jp/ja/stories/story097/ It is a true sake that shows the hard work of our predecessors in the sake making process 😉. We will pair it with sukiyaki (garlic 🧄mashimashi) made with white miso for a seasonal change of health. ....it was delicious 😋🍶.

Today we went for a walk in the morning to a fish shop in a nearby market. There, we had the nodoguro and sayori filleted for us 😋. We served the fish guts with our homemade soup (Kansai-style white miso soup 😁). I had a lot of trouble deciding what to pair it with, but I decided to go with a draft sake from Shiga's Laughing Shiki, which is located in a prefecture without a sea 😉. Great decision! It was the best marriage to complement the expensive fish 🐟.

It was on special sale at a certain department store🐯! Alps Masamune from Matsumoto, Nagano. I drank it for the first time and it has an excellent acidity that I like👍‼️. The aroma and flavor are both good. It is the kind of sake that makes me want to go on a trip to find it after a long time. I will definitely repeat this 🤗. I'll be pairing it with a variety of yakitori (yakitori), homemade avocado, yam, and natto moist salad 😋 that I bought at a department store. It's been a while since I've had a luxurious vacation 🤗.

Canned sake from Kikumasamune's Gin Namaishu. It is very fruity and amazing. It smells and tastes like ripe fruit🍎. Today's home-style sake shop 🏮 dish. Tandoori style fried chicken wings 🍗. (homemade🤗) Thai 🇹🇭 style spinach stir fry (homemade 😉) Thick-baked egg sandwich🥪. Strawberry🍓. They all go well with deep flavors. 😋👍

I bought this Junmai Daiginjo🍶 at a Tohoku fair at a certain supermarket. I usually buy it from Hanaharu in Aizu 😁. Tomorrow will be 14 years since then and I will continue to support them if they can make such delicious products. I would like to visit them at least once 😉. It seems to go well with all kinds of food and tonight I'm having Tom Yam Kung hot pot 🍲😋👍 with cauliflower, pak choi 🌿 and mashimashi.

Rainy day for the Dolls' Festival☔🎎. We opened an adult Hina Izakaya with items bought with an early supermarket discount 🈹😁. The menu was steamed clams with sake. Chicken grilled with yuzu kosho. Choreggi salad with shijimi seaweed. ...and a 30% crab chirashi 😉. I paired it with Kubota nigori sake, not amazake, but nigori sake! Fruity but not cloying and easy to drink, it goes well with the snacks 😋👍.

On a cold 🥶 night like this, I had nigori sake to start the evening. I decided on a nigorizake of Junmai Ginjo by Kamo Nishiki. It is fruity and has the acidity of nigori sake, but it is not too assertive and is very easy to drink 😉👍. We paired it with kimbap, chashu pork with kanzuri on top (why was this a great match for Niigata😁) and steamed clams with sake. The best marriage 😋.

Koyama Honke Brewery's Hamafukutsuru Lupin. It is made with wine yeast and is very fruity and wine-like. It's more like wine! It has a special wine taste with acidity and sake flavor 🍷. My own ‼️ "Aqua Pazza with Cod and Shimeji 🍄‍🟫" is the best marriage 😋. This is it, this 😉.

Junmai Daiginjo Nama Sake from my favorite brewery, Hanaharu in Fukushima 😍. The unique and complex flavor is irresistible 😋. I think that the skill to arrange this complex umami without any spikes is the best sake brewing, regardless of the female toji. 🙇‍♂️ I will pair it with 🈹Duck nabe🦆 with lots of 🌱seri🈹, which I've been into since the other day😁.

Chicken nabe with celeri and root beer. The aroma of the celeri and the wild flavors of the chicken and the root were a perfect marriage 👍. It is a luxury in winter before the big cold. (Don't forget to drink some water as the alcohol content is a bit high at 21 degrees Celsius 😁.)

Ozoni Challenge 2025! This year's homebrew was sprinkled with Akashi conger eel 😉. To go with it is the long awaited keep sake. My favorite sake from Sakata. Sobei early in the SHIELD series by Tatenogawa Shuzo ❗️ It has the acidity that is typical of Tatenogawa, but also this complex flavor and aroma. It also goes well with snacks 😋👍. ...and the cup is our family heirloom, a pine bark tenmoku cup given to us by Lord Nobunaga😅.

Happy New Year 🌅. The first bottle of the new year was a polished 35 from Mr. Takashimizu in Akita 😊 It was labeled "for seafoods", but I had a lot of miscellaneous things 😅 as it is New Year's at my parents' house. It was a dry wine that was easy to drink and refreshing on the palate with the Omi beef roast beef we ordered. I hope to travel around Japan again this year to discover more good sake 😁.

This is a limited-edition, 100% Yamadanishiki (Yamada-Nishiki) draft sake from the Hakutsuru Sake Brewery in Nada, Hyogo Prefecture. This Nada sake has a full-bodied, yet sharp taste. A bottle of our best! The POP says so, and it's true! I don't know if it's only sold in Kansai at AE◯N supermarkets, but I think you should definitely buy it if you can find it. I'd definitely buy it if you can find it.

Today is the last day of work. A small reward for my hard work this year. A bottle of Tamanomitsu's freshly brewed sake from Fushimi. I had been keeping this sake for a long time without drinking it 😊. It's really darker than usual, but it's very good with acidity. I paired it with a meat sucker full of kujo leeks, yakitori (grilled chicken), and miso gobo (burdock root)! The best Yuttori end of the year. ☺️

Dombelli" by Hachinohe Sake Brewery, Aomori, is a nigori (nigori) sake from the Tohoku region, with a slightly sweet taste and a gentle mouthfeel. It's a great evening drink as the winter chill is in full swing. I'm going to pair it with steamed golden turnips, wasabi avocado 🥑, and sasashiori 🐟! The best 😉!

Probably the last hiyaoroshi of the year is Tsukifumi no Ike by Niigata Itoigawa's Inomata Sake Brewery. It has the impact of a new sake, with a great umami and acidity, and no cloying taste. It is very good to have the sake and the snacks go on and on, as is typical of Niigata sake 😉. We paired it with natural yellowtail tataki and roasted chicken wings, there is no reason why they can't go together 😋👍!

Alcohol ban for a week for a reason😫. The first sake of the ban is Hana Haru🌸's Polishing 55! I wonder if they still have a female master brewer. I like the way it has a good balance of flavor and is easy to drink and goes well with all kinds of snacks. Today, I had sashimi of sayori and isaki and grilled conger eel as snacks, and I would like to praise myself for choosing it 👍😉.

Gin Blue is a new release from Kikumasamune. At 10% alcohol, it is easy to drink, and the gentle fruitiness is very good, although it is intended for those who have shied away from it on weekdays. It will be my repeat drink for brunch and daytime drinking after a night shift from now on 😉👍!
