If you read the QR code on the neckpiece, you can see the location of the rice field in the aerial photo. When I bought the same brand later, it happened to be from the same rice field.
I was attracted by the label, which I didn't realize was Daishinshu, and bought it. However, this word seems to be the creed of this brewery.
The taste is gentle, but with a fresh juiciness that is typical of Daishinshu.
The clean taste is consistent, but it has a sourness typical of a traditional sake brewery. I bought it at the supermarket for under 1000 yen, which was a special sale.
Three different types of sake rice are used: koji rice, sake mother rice, and kake rice. The impression of the brewery is a soft and elegant taste, but it has a thickness to it, I think.
Daishinshu's Junmai Ginjo is good.
When I go camping in the Okuhida area from the Matsumoto side, I always stop by the sake brewery.
It is one of my favorite sake breweries.
