After the declaration of a state of emergency, I went to my usual restaurant for the first time in a very long time to drink a bottle of sake called "Shirazen". I had a hard time deciding between this sake and Garyubai from Shizuoka.
The sake has a smooth texture, but is surprisingly dry. The taste of the sake is indescribable and the flavor spreads in your mouth. It's all about deliciousness.
On the condition of sake that goes well with sashimi of Biwa trout, a local specialty of Shiga, we ordered the manager's recommendation. Then, Suginishiki was served. At first, it feels sweet, but later, it becomes dry and sticky on the tongue 👍 which goes well with the taste of Biwa trout (oil). Since I am a local, I would like you to try Biwa trout and my partner would like you to try Shiga sake, but I really recommend this combination. Put the sashimi in your mouth and drink it with a gulp. The taste of Biwa trout doubles. It also goes well with fish roe. A good selection of Shizuoka sake!
At my usual restaurant, I drank "Karakara" Beppin, which was recommended as a sake to go with hamo dipping. It was light and refreshing, but it had a certain flair to it. It did not interfere with the light taste of the hamo. If you take a sip after eating a hamo, you can end the meal with a dry sake instead of a light one, which is really delicious. It is really delicious. I am so happy to be able to drink sake👍.
I ordered a sweet sake to change my mind from the gut punch of Daijiro's Namamoto Zukuri. +It was described as a +5 dry sake, but I was told that it felt sweet, so I tried it. As soon as I put it in my mouth, a sweet aroma spreads and I wonder if it is dry. I thought so. However, the aftertaste is dry, and it remains firmly, and the original dry taste lover is convinced. Strange feeling👍Thanks to the shop that always let me drink a variety of interesting sake.
Drinking Daijirō's nama-motozukuri. I don't drink local sake very often, but I heard that Daijiro's Namamotozukuri was on sale, so I went to my usual restaurant for a drink. Compared to the sake I usually drink, it's a bit more intense and leaves an aftertaste. But the aroma through the nose is pleasant and delicious👍.
Ordered on recommendation at the end of the day. A well-balanced sake with both sweet and dry sides. It has a crisp, clean aftertaste and goes well with Shiga's local dish? It also goes well with yellowtail in rice 👍.
We ordered the AKABU AIR. It has a sweet taste, but it's not like sake, so it's hard to describe, but it's more like a cocktail. Even if your wife can't drink sake, she might be able to enjoy it. The alcohol content is also low at 12%, making it easy to drink. If you use it as a gateway to sake, your world may expand👍.
I ordered the Urasoko.
It doesn't look like nigorizake, but the first sip you take is tight and dry. After that, a fruity aroma slowly follows. The oil from the seared sashimi of saki is perfectly matched to the sake.
From Shizuoka's refreshing sake, I chose Toyo Bijin for the closing. It is a rare sake from Yamaguchi in my favorite restaurant!
I don't drink a lot of sweet sake, but the sweetness of Toyo Bijin remains and is very good.
After the Garyubai, I've had a series of Shizuoka sakes!
The sake is very refreshing and has a great taste!
It is a perfect accompaniment to the Matsuba crab which is banned today. I'm not sure how to describe it, but I really think sake is delicious.
Ordered this to go with bamboo shoot tempura. The taste is much cleaner than I expected and easy to drink. The fruity aroma enhances the flavor of the bamboo shoot without destroying it. Really delicious.

It has a good mouthfeel, and the sweetness spreads softly in the mouth. It's a great wine to drink with salted mackerel in salted rice-bran paste, oyster tempura and butterbur tempura.
