===Mimuro Sugi" Junmai Ginjo Yamadanishiki Orikagarami ==== ====R5 No.8 Sake No.400===== This is my 400th sake post. ‼️ I must have drunk a lot 🤣. This time I had the first new sake from Mimuro Sugi. When I opened the bottle, the fruity and fresh aroma heightened my anticipation. On the palate, the silky sweet acidity and gassy sensation is pleasant on the tongue! Although it is a little bit strong in flavor, it is easy to drink as it is not very high in alcohol content and has a nice sharpness 😆.

===Sake for drinking at home No.399 (R5 No.7) === Tenbi new sake: Special Junmai Nama Comparison of "nigori", "junmai ginjo" and "tokubetsu junmai". The "Special Junmai" is the richest of the three, with a full-bodied rice flavor. The aroma is a bit more subdued than the Junmai Ginjo, but the freshness and fine gassiness make it a beautiful sake that can be drunk easily 🤣The acidity and the bitterness at the end are well balanced ‼️.

===Sake for drinking at home No.398 [R5 No.6] === The new Amami Junmai Ginjo Nama-zake Comparison of new Amami sake "nigori", "junmai ginjo" and "tokubetsu junmai". Junmai Ginjo" has an aroma reminiscent of muscat, and its fruity sweetness and acidity spread on the palate. It was the lightest of the 3 bottles of Tenbi we compared 😆. I️ think that even sake beginners will definitely like this sake.

===Sake for drinking at home No.397 (R5 No.5) === Amami new sake "nigori" (new sake) We compared and contrasted the "nigori", "junmai ginjo", and "tokubetsu junmai" new sake bottles of Tenbi during the New Year's holiday. Nigori Nama, also known as "Yukiten", is a sake with a hole in the stopper that you have to be careful not to open ⚠️. It is characterized by silky gas and a light nigori, and has a great freshness. It has a fruity sweetness and acidity that fills the mouth, and the depth of flavor and lingering aftertaste is pleasant.

===Sake for drinking at home No.395 [R5 No.3] === Chiebijin Junmai Daiginjo Comet Orikagarami Nama-shu This sake was drunk at the beginning of the year. The red and white checkered label is perfect for the New Year. I have been wanting to try this sake brewed by Nakano Shuzo, a Kyushu sake brewery, from Hokkaido's "Comet" rice. The taste was fresh yet soft on the palate, with a very pleasant sweetness, acidity, and gasiness from the orikarami.

====Home drinking sake No.394 (R5 No.2) ==== Futa Usagi" zodiac bottle 2023 Junmai Ginjo Banzai 55 Shiboritate Nama-nihon-shu If it's the Year of the Rabbit, you have to drink "Ni-Rabbit"! The zodiac sign bottle is a directly pumped, freshly squeezed, unpasteurized sake made from local Manzai rice. It has the freshness of freshly squeezed rice and a taste with a graininess typical of Manzai. It has a nice aftertaste with a refreshing acidity, spiciness, and a slight gassy sensation.

The freshness and richness of the raw nigori sake and the mellow sweet and sour taste with a pineapple flavor typical of HANA-YOUKU spread in the mouth with a gaseous sensation 🤣.

====Home drinking sake No.390 (R4 No.107) ==== ◯Mikawa Bushin Junmai Ginjyo Naokumi-Okirigarami Nama-zake We got this sake at the year-end festival of Maruishi Brewing Company 🤣It has a fruity aroma similar to that of Futato. When you put it in your mouth, you can feel the gasiness and the umami of the rice. It has a strong flavor, but the acidity and bitterness make it easy to drink.

====Home drinking sake No.389 (R4 No.106) ==== Mutsu Hachisen Nouveau Oorigarami Special Junmai Unpasteurized Sake I forgot to take a picture of the empty bottle 😅 It's a very fresh sake with a nice aroma ‼️It's ogara-mi, but it's not so thick and you can taste the sweetness and acidity of the rice. I finished it in no time 😆. Thanks to the efforts of many people and the logistics system, we can drink sake from far away Aomori in a fresh state 😊.

====Home drinking sake No.388 [R4 No.105] ==== Nitoshi" Junmai Daiginjo Yumachi 48, light nigori (light bittern), raw. It's hard to wake up in the morning because of the cold weather...💦But the sake is the best in this season. This time, Ni-Utsuri is a version of Omachi 48, directly pumped, light nigori, and raw. The aroma is sweet like berries, and when you put it in your mouth, the sweet and sour taste with gasiness is very assertive and delicious 🤣. I can't catch up with all the new Ni-Utsuri sake that are coming out one after another 😅.

====Home drinking sake No.387 (R4 No.104) ==== Junmai Yamadanishiki 65 I was looking forward to drinking the "Junmai Yamadanishiki 65", the first new sake from Nitoshi. The fresh and juicy sweetness and acidity spread quickly, and the spiciness and bitterness finish off with a crisp finish 😊I think we can expect a lot from this season's Ni-Toshi👍. By the way, I went to the year-end festival at Maruishi Brewery in Okazaki today and wanted to get a bottle of the zodiac label Usu-nigori, but it was sold out after only two servings for me...💦I couldn't drink it because I drove there, but everyone drinking at the brewery looked happy and the atmosphere was great😆.

===Sake for drinking at home No.386 [R4 No.103] === ZAKU" Yamadanishiki 2022 Junmai Ginjo This time we drank Yamadanishiki from the Saku sake rice series, which is released every spring. The Yamada-Nishiki is grown in Mie Prefecture. It has spent the summer and fall in our refrigerator since we purchased it in the spring💦. It's been a while since we got it, but it's fresh and lush! It was fruity, yet light and delicious 😆.

===Sake for drinking at home No.385 (R4 No.102) ==== AKABU Junmai Hiyahoroshi The new AKABU sake is being released one after another, and this is "Hiyaoroshi". It was already matured at the shipping stage, but it was further matured in the refrigerator. Compared to new sake, it has a more rounded and subdued flavor, with a pleasant sweetness and acidity that spreads quickly in the mouth, and is thick but goes down smoothly. Personally, I think it tastes even better if you savor it slowly and carefully while picking prosciutto.

The sake name "Shippo" refers to the series of raw sake made from "Hyogo-Kitanishiki" rice 😊. It is a beautiful sake that is extremely fresh and rich in flavor, yet refreshing and crisp. It is so easy to drink that you must drink too much 😆.

Shichiken has been my boom lately, but it's hard to find a place near me where I can get it 😓 This sake is light and dry, very easy to drink, and has a good balance of sweetness, sourness, and bitterness of rice 😆.

(see the second pic) written on the label of this Ichinen Fudo 😊. I like the words on the label of this Ichinenfudo, "The best is not only in front..." (see the second pic) 😊 Ichinenfudo is matured for a long time before shipping, but this freshly brewed special junmai is an exception, you can taste the freshly made new sake 😆 It has a fruity aroma with a hint of youth, and in the mouth, the fresh sweetness and acidity spread pleasantly with a sense of gasiness 🤣.
