Tottori Umezu no Ikumoto Zaru Zaru Nama Genshu Tamasaka R2/80 White Label We opened an interesting sake. It's a low-fermentation sake that's only half lees, and it's been straining through a colander. According to the law, if you strain it through a colander, you can call it sake, not doburoku. It tastes like you are eating a rice ball. It is impossible to open the package without spilling.

Yamaguchi GANKI Sparkling Junmai Foam Nigori Nama Genshu This is a gold medal winning sake of IWC 2020. This was a surprise. It has a moderate acidity followed by an elegant sweetness. The strong carbonation makes it crisp and clean. Definitely the best sparkling sake I've ever had. I bought it today, but I want to go back tomorrow to buy more.

Ibaraki Prefecture Raifuku: The Original Fruits "Apples". Concept Worker's Select apples. You can really taste the apple as you stare at the label. I'm glad it comes in a bottle.

Kouei Kiku SNOW CRESCENT Unfiltered Raw Sake This is the last Koei Kiku sake of this season. As the name suggests, it is a cloudy sake with coarse lees like snow. Contrary to the appearance, it is sweet and juicy, and has a moderate swooshiness. It also has the sourness that is typical of Kouyougiku, and it's my favorite flavor of the season. I'm glad I bought a bottle.

Chiba Prefecture Koko Mukunosake Junmai Ginjo Nama Genshu Shinshu Shiboritate A sweet and delicious fresh type. I like Koko very much. It's really delicious.

Nanbu Bijin Yuzo Special Misan Nishiki I also bought the Miyamanishiki version. This one was also hot. Much drier than the Omachi. The aroma really blossoms when it's heated.

Nanbu Bijin Yuzo Special Omachi This is a special limited edition of Nanbu Bijin. Yuzo Kuji, the managing director of Nanbu Bijin, has created this sake as a food sake that is different from the traditional Nanbu Bijin style of sake making. It's supposed to be best served hot, so we heated it up. I don't drink hot sake very often, but it's really good.

Kanagawa Prefecture Tanzawa Yama Neko to Kinyo Junmai Nama Genshu This is the second bottle of low polished rice. This one is polished to 70% and has a light summery taste that doesn't feel like undiluted sake. If you look at the label from the back, you can see a goldfish on it.

Hiroshima Prefecture KAMEIRAI 92 Junmai Unfiltered Nama Genshu This is an unfiltered unpasteurized sake with a low polishing ratio of 92%. The low polishing ratio is very popular these days, but the sake brewing technology has improved, and this is really delicious. If you haven't had many low polished sake before, this is one you should definitely try.

Saga Kouyougiku Sunburst unfiltered undiluted sake It has a burst of acidity like Koeigiku. It's a new type of sake that didn't seem to exist until now. I don't dislike it.

Yamaguchi Prefecture Ottersai Junmai Daiginjo 45 Using Yamada Nishiki from Fukuoka Prefecture Fukuoka Limited Edition Ottersai's "Local Ottersai" using Yamada Nishiki from different prefectures. It's been a while since I've had an Ottersai, but I can't really tell the difference between this and the regular Ottersai. I've had it for a while, but I can't really tell the difference between it and the regular Ottersai. It's a good sake for a meal.

Saga Prefecture Nabeshima Yamadanishiki Junmai Ginjo Raw I let it sit in my fridge for about 6 months. I thought it might have lost some of its flavor because it froze once due to a refrigerator malfunction, but it didn't. It was really good. The Nabeshima Yamadanishiki is definitely delicious.

Akita hm50 Junmai Ginjo Raw ActⅦ Misoshiki This is the 7th prototype of Hanamura. I was lucky enough to find it, so I bought it. It's not sweet like Hanamura, but a little dry, and it's a bottle that makes you feel the breadth of Hanamura.
