AKABU Junmai Ginjo, Iwate Prefecture A revived brewery that reopened in Iwate in 2013 after being swallowed by the tsunami in the Great East Japan Earthquake. This is a fire-aged version of Akabu Junmai Ginjo, made by a young toji (brewer) as a sake he wants young people to drink. The sake is characterized by sweetness and has a modern taste.
