You can get sake from Shikoku occasionally at Sake no Kawashima 😌✨.
They use 1401 yeast and it's 58% polished and has a pretty pronounced banana type aroma for being claimed to be pure rice😊.
On the palate... it's quite intense, with a taste somewhere between melon and banana, and the aftertaste is rather sharp and crisp✨.
Kawatsuru used to be a heavy brewer, but this time they used Kanazawa yeast for the first time to make a clean brew😊.
It has a bit of weight to it due to the 17% alcohol, but it has enough flavor to keep you coming back for more😌.
