I drank this pouring from a fun bamboo bottle at Chicago Ramen. It was smooth and mellow cold, went well with the ramen. I would love to try it hot next time!

Cory bought this for me on his trip to Japan, which included a Doburoku Festival in Shirakawago. The label mentions a sharp taste to this sake and they were not exaggerating! It has a sharp, almost spicy flavor complemented by an almost unctuous richness. Delicious and fascinating!

Interesting sake - the wet stone flavor is present but in a nice way. I found this sweet and very juicy. Overall, quite good and very different from other sake I have tried. This is my first kimoto. I read my first sake book recently and am impressed now that I know what a kimoto is.

Drinking this at home as a reminder of the fantastic time I had in Japan this year. The taste has matured since September, it’s deeper, rounder, and very flavorful. The apple taste in this sake in September mellowed but the slight sweetness still remains. Absolutely delicious!

Bought at Binny’s in Mundelein and drank with the Ultimate D&D Crew while playing through the Sunless Citadel ❤️ Delicious - easy drinking with a mellow flavor that stays crisp and tasty throughout the bottle.

Found this at Mitsuwa and had to buy it because of how much my husband loves Inari and her messengers. I shared this with Eddy, Grace, Andy, Carol, and Tom at our welcome back dinner after we got home from Japan. It was balanced and nicely floral! I enjoyed it but don’t think I would buy it again unless it’s on a really great sale. $50 is a lot for a bottle and I’ve had sakes I’ve enjoyed more that are much cheaper.

Drank w Eddy, Grace, & Jesse at Fushimi Sake Village. Enjoyed it but wasn’t a top fave from the 18 we sampled. Notes: Daiginjo represents the finest of Japanese sake with a polishing rate of over 50%, revealing the heart of the grain, the niche of the sake's rich aromas. Gekkeikan Daiginjo Nama Tsume is surprisingly fruity, refreshing, dry in the mouth but delicate & subtle. Unpasteurized before bottling, it expresses notes of 🍏 and 🍐 typical of the yeast specially created by the brewery.

Drank w Eddy, Grace, & Jesse at Fushimi Sake Village. Rich and creamy! A representative of the original sake. Also “champagne of rice”, like sparkling wine made from rice. You can feel fruity aromas, refreshing acidity, and a pleasant mouthfeel.

Bought this in Okage Yokocho (おかげ横丁) outside of Ise Jingu Naiku. Shared with Grace and Eddy when we went to Kyoto. It was sweet and delicious!

Sampled at a tiny sake and pickles store, Kyogokuya (京極屋) in Fushimi Otesuji Shoutengai (伏見大手筋商店街). Purchased at Fushimi Sake Village Store, Fushimi Sakagurado (伏見伏水酒蔵堂). Absolutely delicious - crisp but very flavorful & fruity. Pineapple but more mellow 🍍 Notes from another user about Matsuyama Shuzo: “Matsuyama Sake Brewery, originally a dedicated brewery for Gekkeikan, a major brewery in Fushimi, did not have its own brand until the spring of 2023.”

Sampled and purchased at a tiny sake and pickles store, Kyogokuya (京極屋) in Fushimi Otesuji Shoutengai (伏見大手筋商店街). Beautiful sake, tasting notes of apple 🍎 Note: 'Hiyaoroshi' is a term that refers to a process in which shiboritate sake from winter is pasteurized once in early spring, stored, and aged over the summer.
