This is the second sake I purchased in Suwa, which I visited the weekend before last. I couldn't even get lunch today, and as a reward for working hard, I opened it without waiting for the weekend. It is the first Daiginjo I have had in a long time. A sip. It has a faint sweet aroma. It is refreshing, but it finishes crisply. It is delicious. Maybe the Masumi and Daiginjo are getting to me. If I buy too much sake, I get complaints that my refrigerator gets too small, so this was 300 mm. It ran out quickly. I paired it with red meat and eringi mushrooms that I bought at the butcher shop. It was a feast.

I bought it at a liquor store I discovered while out of town. It's a jackpot purchase & a liquor purchase in an area where I haven't been drinking. When I took a sip, it flowed down my throat easily. Dry and lighter than expected? From the second sip, I could taste the umami while it was refreshing. I wonder if the flavor will change over time? I would like to open it up a bit and enjoy it again. The meaning of "rabbit's ascent" is a metaphor for showing one's ability in one's field of expertise, or being blessed with favorable conditions and making good progress in one's work, and is said to be a good omen. Let's keep up the good work this week!

I bought some gifts, such as this sake made from Honkin gold, which is hard to find in Tokyo. The explanation given at the store was that the sweetness is followed by a slight bitterness that quickly disappears, and it was absolutely true. I wondered what the bitterness of sake was like. Dosai is my favorite brand. But this is the first time for me to have a draft sake. I've been wanting to get some and haven't been able to find it at the right time, but I finally got to meet you. I was busy this week, so let's drink! I was looking forward to the Friday when I was going to drink it. I took a sip and thought it was the same as the usual red sake. I thought it would be the same as the usual red Doshin, but it was still a fresh sake. It had a freshness to it. I thought it could be a little sweeter, but in my opinion, Doshai is the best food sake. It is reasonably priced and always really tasty. I had it with squid pancake and tuna sashimi.

Over the consecutive holidays, I participated in the Kyoho no Oka Marathon and went to Yamanashi. Usually, I go to Katsunuma for grape picking and wine, but this year, I extended my visit to Yamanashi Meiken, which is famous for Shichiken. There were many different kinds of sake available, but since I was there, I bought a limited-edition draft sake that can only be tasted at the brewery. It is one of the seven types of "nama-shu" from junmai-daiginjo to honjozo, named after the "Seven Sages of the Takebayashi Forest. The first sip reveals a subtle sweetness that is typical of nama-zake, but it flows smoothly down the throat and does not interfere with food. I like it. We enjoyed it with local Okura (okra) and Abura-age (fried tofu).

I chose this sake because it is a food sake and a sake from an unexplored region. I thought it might be too sweet for a food sake when I first sipped it, but the sweetness quickly disappeared from my mouth and I was able to drink it without hesitation. We had it with local grilled scallions, and the sweetness of the sauce did not go well with the scallions. Kagoshima is known for its shochu (distilled spirit), but there is also this delicious sake.

This is the second gift from my trip to Tochigi. I opened a bottle of Hououmida, which I bought at the same time as Nanamizu. I like the kanji character for "Houou Mita," and this hiyaoroshi also won me over. It has a sweet aroma, but when you drink it, it is refreshing and extremely tasty. I paired it with burikama and salmon, but it was too good. It was beyond my expectations. It is an early hiyaoroshi, so it may be a little young, but it went well with the dishes and was the best drink of the weekend. Maybe the sake from Tochigi goes well with it. I looked at the Tochigi sake ranking and confirmed that all the sake from the top are good.

I went to the Otani Museum in Tochigi on vacation. Near the museum, there is a store called Kikuchi Sake Shop, where I bought this sake. I bought this sake at a shop near there called Kikuchi Sake Brewery. It is unique to the area. I had to buy it. There were two kinds of sake: hi-ire and nama-shu, but I bought the nama-shu, which I love without hesitation. I could feel the fresh sweetness of Nama-zake very much. I paired it with Japanese dishes such as sashimi and grilled fish. Although the lingering summer heat is still intense, please visit the Otani Museum to feel the history and cool off, and then go to a nearby store to buy some sake and reaffirm the delicious taste of Japanese sake!

I purchased this sake for everyday drinking at room temperature. It has no peculiarities in a good sense and can be drunk easily and refreshingly. It goes well with fish. I would like to enjoy it slowly so as not to drink too much.

I paired it with gizzards and thick fried tofu. I wanted to drink Fukuoka Prefecture's sake, so I chose garden urchins, often found in izakaya (Japanese style pubs). It is a summer-only special junmai sake that is light, crisp, and soothing in the summer heat. As the description says, it is refreshing and does not disturb the food. A bottle was quickly consumed. It is very good as a food wine at this time of the year when it is getting hot and humid, and when one's appetite is slightly down.
