Preference ★★★★☆ The third cup of Omachi was Mimuro Sugi! The master, who loves sake, was surprised after a long time because it was so delicious! He said it was the best recommendation. I couldn't help drinking it when I heard that. It was delicious.

Preference ★★★★☆ The second glass of Yumachi was Jyushidai! I was lucky enough to have a chance to meet a Yumachi of Jyushidai. When it is a Jyushidai, Junmai Daiginjo, Akaban Yumachi, and Nakadori, there is no choice but to drink it. It was delicious. I should have recorded it while my memory is still vivid.

Preferred ★★★☆☆☆☆☆☆ My favorite Omachi 3 times in a row. The first cup is Wakanami! I had heard that their honjozo is cheap and delicious! I had heard of Wakanami's reputation for cheap and tasty honjozo, and had been wanting to check it out sometime. By chance, I came across Junmai Ginjo Omachi this time. It was delicious. I don't remember the details because I drank so many things that day.

Preferred ★★★☆☆☆☆☆☆ The last of my husband's Akita souvenirs is a Junmai Daiginjo made from rice called Kaihatsu-Shinko, which was created in Akita Prefecture, from ICHIHAKUSUINARI, which cannot be purchased because there is no special distributor in the local area! This is apparently only available at Sugakyu. I liked its light, yet delicious flavor with a crisp aftertaste. Wine glass recommended.

Preferred ★★★☆☆☆☆☆☆ The last sake I got on my trip to Niigata, Episode 4.2, a Junmai Ginjo-shu made with Yamae-Nishiki from the Koshi-Ichi series, a limited-edition product of Echigo Tsurukame. As stated on the label, it is light and slightly effervescent, with a juicy acidity reminiscent of grapefruit. It would be a good match with light pasta and salads with shellfish and vegetables. Please enjoy it with a glass of wine.

This cup of sake was purchased during a trip to Niigata. I was attracted by the cute label and bought a packet, but perhaps because I forgot to drink it and it got old, I didn't like the taste. It was sweet but tasted sour. I will keep the cup and soak in the memories of the trip.

Preference ★★★★☆ Hana Yuu Omachi. When I found out that Rikuwada and Yumachi were available in four-pack bottles, I made a reservation and bought them. Sweetness I like as I imagined. Full, thick, robust (I don't have the vocabulary 🥲), sweet and delicious. It was just like I thought it would be - delicious - and it went down smoothly. Surprisingly sharp and crisp without being lazy. Personally, I liked it.

Preference ★★★★☆ My husband bought this bottle in Akita. The store staff recommended that I enjoy the changes in flavor over several days after opening the bottle, so I enjoyed it slowly over a week or more as they recommended. I liked the umami flavor, mild sweetness, and acidity that is typical of a sake made from the traditional sake brewing method, and the soft, bubbly taste. I used to like sake best when the bottle was just opened, but this one was certainly a fun (and delicious) change. I recommend drinking it at the temperature indicated on the label, after taking it out of the refrigerator for a little while. The fullness and depth of flavor is different. I think this would also be delicious heated. The price is reasonable and surprising.

Preference ★★★★☆ I got this Abe on a trip to Niigata! I had someone who wanted me to drink this, so I let it sit in the fridge for a long time and finally got to drink it. The elegant acidity is like wine, and I like the light sweetness. I would like to try other Abe as well.

Preferred ★★★☆☆☆☆☆☆ Pure black "Shiboritate Nama-nihonshu"! Juicy acidity like citrus fruits and a slight gassy feeling typical of nama sake. Among all the Yamamoto's I've had so far, I liked it the best with a touch of sweetness. Delicious.

Preferred ★★★☆☆☆☆☆☆ I bought this sake after reading about it in dancyu. I opened the bottle, repeatedly loosening and tightening it, being careful not to spill it. The sparkling wine-like mouthfeel, which is not too dry, is just right for the hot summer, and the sake goes down well. The juiciness of the rice stands out and is delicious. It is not too sweet (as I like it firmly sweet), but refreshingly light sweet and sour. I recommend it to be chilled well and toasted. My husband liked it a lot. Postscript After a few days, the bubbles have settled down and the slight bitterness is like grapefruit.

Preference ★★★★☆ Sado limited edition sake by Garaudai! Sasu! A friend of mine who went to Sado bought it for me as a gift and we all enjoyed it together. When we poured it, the fine, piquant bubbles raised our expectations. In the mouth, a gaseous feeling like that of a ramune. I don't detect any aroma. It is light and dry (a bit milder than the traditional light and dry), with no sweetness and moderate acidity. The cleanliness of the water is particularly impressive, and it is like an elegant soda water (unsweetened) carefully made with such delicious water. It is not too dry and light to drink, making it perfect for summer. I was very happy because I was shocked by the taste of the first Narukami I drank a few months ago, and just when I wanted to drink it again!

Preference ★★★★☆ Rikuwada, the rice used to make this sake, was a variety I had never heard of before. Upon research, I found out that it is a rare sake rice bred by Mr. Takagi, the brewer of "Jyushidai" and that there are only a few farmers who grow it and its quantity is very small. Furthermore, according to online information, only Hana Yuu is currently using this rice, which piqued my interest, so I made a reservation and purchased it. It was smooth (somewhere between smooth and smooth), sweet (-4.9 sake on the sake store's page I looked at), and had a rich umami flavor that I really liked. Upon closer inspection, I was also surprised to see that it was junmai, not junmai ginjo. It had a beautiful texture with no cloying or roughness, I also thought it was wonderful that it had a nice sharp aftertaste despite being sweet and umami.

Preferred ★★★☆☆☆☆☆☆ Mellow road single-minded. I enjoyed the Sake Mirai I had before so much that I have been chasing the different rice. As an omatist, I couldn't pass it up, so I bought it and kept it in the fridge for an opportunity. Compared to Sake Mirai (sweet flavor), it is a lighter and lighter type with a good balance of sweetness and acidity. Delicious and my favorite. After opening the bottle and letting it sit for a few days, the sweetness settled down and the fat in the mouth broke off (I paired it with sushi) and I thought it would be good as a mealtime sake.

Preferences★☆☆☆☆ Super dry at +15. I always see the fire-roasted type, but this is the first time in several years that a fresh one has appeared, so I bought it on recommendation. It is not my favorite, but I also wanted to try it to see how super-harsh it is. It was surprisingly soft on the palate, and perhaps because of the freshness and transparency of the sake, it was strangely not as spicy as I had expected. It is delicious. Rolling it over, it has bitterness and a firm umami flavor. The sharpness of the taste suggests that it would be good with Japanese food such as fish and simmered dishes, rather than Chinese or Western food. Because of the strong alcohol content, I drank less than usual.

Preference ★★★★☆ Sake made by Obuse Winery in Nagano. It seems to be very rare, as it is made during the short time when the winery is not working. I was originally a wine drinker before I got into the sake swamp, so I was very interested in sake made by a winery. The aroma is subdued but promising, with a fresh sweet acidity like that of white grapes. The taste was complex yet sweet and sour, and both my husband and I found it delicious (and would drink it again), so I think it is a delicious sake, except for those whose tolerance is extremely narrow. It has broadened my world again.

Preference ★★★★☆ I am not familiar with the brand, so this is the first time I have heard of the brand, but I know how delicious and rare it is just by the fact that it is called Shinmasa. The lot number is written on the label, and it is said that only 2,000 bottles of this sake are made every year. It is a kijoshu, which means it is sweet, but the way the sweetness disappears is superb, and I felt its uniqueness in the way it disappears cleanly and clearly. The beauty of drinking outside is that you can encounter such a rare sake and listen to the fun stories.

Preference ★★★★☆ The fourth drink of the evening was Nakanori, which I am ashamed to admit was the first time I knew its name. The attack is light and sweet and easy to drink, but it has depth and is a delicious sake that I would like to add to my regular lineup like Oshinshu. There are many delicious sakes from Nagano that suit my taste.
