Shinshu Kireiひとごこち 純米吟醸

I bought this one at the brewery during a small trip to Nagano. I compared it with junmai-shu and found it to be cleaner, less cloying, and a little more aromatic. It seems to be similar to Junmai sake, but has a different charm.

It is a sweet and sour liquor with a low-alcohol, gassy taste. It has a muscat or lychee-like aroma and is light and very easy to drink, so you can gobble it up. It seems to have a sake degree of -90, so of course it is sweet, but I didn't feel it was too sweet.

I went on a short trip to Nagano and was able to purchase this wine at the brewery. The aroma is fruity but rather subdued. There is a considerable sense of gas and it feels fresh. It has a sweetness to it, but it may be in the dry category. There is a slight bitterness that comes afterwards, and I thought it was quite a robust sake with a lot of flavor. However, it is not too heavy and not too gorgeous, and I enjoyed it.

The cup design was so austere that I had to buy it. The taste is relatively mature, dry, and rather robust. The taste is astringent, with a sour aftertaste, but it is a classic sake, so the matured aroma is not to everyone's liking. If that is not a problem, it is a good sake for a drink at a business hotel.

I like this one a lot. The aroma and sweetness are not assertive, but the sake is robust and you can taste the rice. It has just the right amount of alcohol and sharpness, making it a sake that I would like to enjoy with rice.

I drank it for the first time. It is a fruity, slightly light and dry sake. I think it is very easy to drink and moderately tasty, but the sake itself doesn't have much taste, and it is very light-bodied, so I thought it would be different for different tastes depending on whether you find it easy to drink or not.

This is my first Takachiyo. It is a mellow sweet type of sake that is quite robust. It has a fine, strong shwash and a slight bitterness, and the alcohol content is 16%, so you can be satisfied with just one cup. The sweetness lingers in the aftertaste, but it is not unpleasantly sweet. However, it has a strange fudou-like flavor, which may have been imprinted by its appearance.

I think it is in the "light-dry" category, but if the chart were divided into 4 sections (light/mellow, dry/sweet), I would say it is more in the middle. I think it has a rather sweet aroma and is easy to drink. I like to drink this kind of sake chilled in summer.

The aroma is faintly fruity, with a faint sweet and bitter taste. It feels like a rather robust sake, but it is easy to drink without being cloying. We enjoyed it very much.

It has an apple-like aroma, and the one I drank this time seemed to be more mellow than sweet. However, it was not overly heavy and was refreshing. This is a cheap, tasty, and dangerous sake.

I purchased this sake at the Niigata prefecture antenna store in Nihonbashi. It is a slightly sweet sake with a faint aroma. I guess it is a light sweet sake, and although it has a certain amount of alcohol, it has a clean aftertaste, which I quite liked.

Purchased at an antenna store in Ginza, Kochi. It was made in December 2009 and drunk in July, so it may have aged well, but it had a fairly mature aroma and acidity. I think it is a light, refreshing sake with a good sharpness.

There are many antenna stores in Ginza, and each of them sells a variety of sake that you cannot find at liquor stores in Tokyo. This time, I bought this one at the Hiroshima antenna store. If you drink it cold, only the sweetness prevails, but if you let it sit for a while and raise the temperature, a slightly matured flavor emerges. The sweetness, bitterness, and astringency of the flavor are more subtle, giving it a very classic taste.

It is carbonated, though not gushingly so. It is quite sour and not too sweet, but the bitterness is rather pronounced. It is refreshing and suitable for summer. Two days after opening the bottle, the carbonation is naturally weaker and the bitterness is a little more pronounced. It is not too sweet, so I could enjoy it.

Souvenirs from Oita This one was also recommended by a liquor store, so we bought it. It has a moderately good aroma, slightly sweet and mellow taste. It was not that heavy, and I quite liked it.

Souvenirs from Oita Chiebijin is a sake that can be found in Tokyo, so I did not intend to buy it as a souvenir, but since I had never seen Chiebijin in kanji before, I decided to buy it. It is a very tasty sake with a nice fruity aroma, dry and with a taste of rice, but with a nice sharp taste. I would like to try the Hiragana Chiebijin next time.

Souvenirs from Oita I chose this because the store seemed to be promoting it quite a bit. The aroma is quite subdued, with just a hint of an alcoholic zing. At first, I drank it straight. At 8% alcohol, it is low in alcohol content, and if you weren't told, you probably wouldn't think it was sake. It is a very crisp, light and refreshing sake, but I felt it was lacking something for me. The next day, I had it with soda, which is recommended. I made it 1:1, but it could have been thicker.

Souvenirs from Oita I decided to buy it because I wanted to know the difference between it and Kamisen. The aroma is similar, very distinctive, like it has been aged. You can taste acidity, sweetness, and rice, but the sharpness is quite good. It is a classic type of sake, but I think this one is easier to drink than Kamisen. I also felt it tastes better lukewarm than chilled.

Souvenirs from Oita I have the impression that Kyushu is known for its shochu culture, but there are many sake breweries in the area. After looking around several supermarkets, this Nishinoseki Kamisen seemed to be the most commonly consumed sake, so I decided to buy it. First of all, the aroma is very matured, or rather sour and mellow, with an amazing aroma. When I drank it, I found it to be quite sweet, and upon closer inspection, I realized that sugar had been added. It is a rather mellow and robust sake, and I thought it was quite out of my taste. Soy sauce is also sweet in Kyushu, and perhaps people prefer sweet sake as well.
