Fukushima "Collage" Junmai Ginjo To be honest, I don't remember much lol. But I think it tasted a little different and had a strong acidity. I remember it clearly even if I drank it in the latter half of the year when I liked it, so I guess I wasn't very good at it.

Yamagata "Kudo Ue Jr.'s Future 33" Junmai Daiginjo The aroma was mild and clean! The taste was also quite refreshing and fresh. As expected from a rice polishing ratio of 33%, the taste was sharp with a hint of sweetness. Delicious. 4

Yamagata "Jyushidai Gin-Sen" Ginjo-Shu It had a soft, fresh aroma, a light, bouncy texture on the tongue, and a light, smooth watery taste. It was sweet, but not too sweet and refreshing. I would like to drink it with a meal. (It's too expensive for me, but I can't. lol) 4.3

Toyama "Sanjoraku" Junmai Ginjo The moment it is opened, the aroma is mellow and sweet, like a ripe banana. It has a rich aroma. It is interesting to note that the aroma changes to a heavier aroma quite quickly when exposed to air. On the palate, after a light sweetness, there is a sourness and bitterness that stimulates the tongue, a spiciness in the throat, and a crisp aftertaste with a direct hit of rice flavor. It is a Hokuriku sake. However, it was a little heavier than light and refreshing. 3.8

Eikun Izutsuya Ihei Junmai Daiginjo, Kyoto The aroma is mild, with a sweet, sour and refreshing aroma wafting through the air. The color is clear, almost transparent, and the water is smooth. A soft sweetness comes first, followed by a refreshing sourness, which passes down the throat quickly. The aftertaste is sweet and a little sour, leaving a refreshing impression! Polished to 30%-5%, the overall smoothness is very easy to drink. It is more sweet and sour than spicy, and is refreshingly easy to guzzle. I love it! 4.8

Toyama "Manjusen Pero" Junmai Ginjo The aroma is quite sweet and strong. It was sweet and light, and the low alcohol content made it very easy to drink! I drank it with strong food, but I think it left a sweet aftertaste without being drowned out. ★4

Ishikawa "Tedorigawa" Junmai Ginjo This is the second Tetorigawa Junmai Ginjo in my life. The soft sweet and sour aroma spreads, and the first thing you smell is delicious. The overall taste is slightly sweet, but it goes down smoothly and is very easy to drink. The sweetness lingering in the aftertaste is pleasant! This is a sake that you want to drink with gusto during a meal, no matter how many glasses you have. 4.5

Yamaguchi "Otters: Polishing ratio of 30% to 90 I had the rice polishing ratio of 45 before and enjoyed it so much that I had 39 this time! The moment you open the lid, you can feel the bubbles popping, the fruity sweet aroma spreads, and it's delicious from the first moment! When you put it in your mouth, the soft water and gentle sweetness spreads, and when it goes down your throat, it becomes crisp and spicy, leaving a clean and refreshing aftertaste that is polished and polished. The aroma and taste never get boring, and it is very easy to drink and delicious - perfect for a mealtime drink! 4.5

Kyoto "Kinpi-Masamune" Junmai-Ginjo Aromatic, fruity, sweet, and smooth (thickened), yet it goes down your throat smoothly and crisply. The taste itself was too strong for me. But I like the taste. Easy to drink and easy to recommend. 4

Yamaguchi "Ottersai Junmai Daiginjo 45 I finally drank an Ottersai! As expected, it is very popular. The sweetness, spiciness, and acidity are all well balanced and very easy to drink. The aroma is soft and gentle and does not disturb the meal. The water is so soft and smooth that you can drink as many glasses as you want. The pungent taste that does not linger on the tongue or throat in a good way, the sweet taste that stops gradually, it was the best cup ever! 4.5

Toyama "Hayashi" Junmai Ginjo Nama Shu Refreshing and spicy, perfect for summer! It has a refreshing taste that goes down your throat and a spiciness that lingers on your tongue. There is a little sweetness, but it is not heavy and does not linger in the aftertaste. It would be good with light dishes, sashimi, or sushi. 3.7

Akita "Harukasumi" Junmai Heavy, heavy, and spicy. It has a strong, robust flavor that sticks in your throat. I wondered how it would taste since the label of the spring water was refreshingly sweet, but this may be the opposite. 3.4

Akita "Harukasumi Wakamizu Label" Sake Degree -6 The first sip of this sake impressed me! The aroma is mild. The aroma is mild, the taste is refreshing as it passes down the throat, but a gentle sweetness lingers on the tongue in the aftertaste. The soft sweetness of the water and the sweetness of the rice are in perfect harmony, and it seems as if you could drink many cups of this sake. Anyway, you can taste the water with just one sip! The taste has little impact, but it is super-perfect as a food sake. 4.6

Aomori "Mutsu Hachisen This was recommended as a food sake. The aroma was not too assertive, but rather subdued. The overall taste is clean, but the aftertaste is sweet and easy to drink. For better or worse, it is very good, and in a sense, it is hard to remember...or is it? Good as a food wine. 3.8

Akita's "Yuki no Bijin As an aperitif, I received a recommendation. First of all, the aroma is just gorgeous! The fruity aroma spread after just a few whiffs. It is spicy, passing down the throat and lingering a little. The taste is rich and ricey, as if it lingers on the tongue. I am glad I drank this as an aperitif and not as a food sake. I can't drink a lot, but I would like to drink it little by little. 3.5

Fukui's "Denshin" Fukuro-huri summer sake. I asked for something refreshing and this is what was recommended. It was cool and spicy when I drank it, and it was more robust than I expected. There was not much sweetness. It is good as a food sake, but I did not want to drink many glasses of it. I wonder how it differs from the regular sake when it's bagged. Is it clear and free from unnecessary ingredients? 3.5
