I bought it at Tanaka Sake Brewery's "Kamegokura" in Otaru. After tasting three kinds of sake, I found that the umami was a little weak, so I told them my preference and this is what they served me. The aroma was almost nonexistent. If you look carefully, you can smell a faint aroma that is typical of sake in the distance. In the mouth, the first thing you notice is the acidity, followed by the umami, which is not unpleasant. The lingering aftertaste is only sourness, which then fades away. Well, for me, the acidity is a little strong. The umami is okay, and I don't dislike it, but I wish it would come with more gusto.

This is "Nara no Fuyu-shu" from Toyoshuku, which I bought when I visited Nara. The color is beautifully clear. The aroma is almost imperceptible. When you put it in your mouth, the umami comes for a moment, but it seems to disappear without reaching its peak. The aftertaste is like the umami is left halfway through. For me, who likes umami with a lot of zest, it is...hmmm...

Went to the brewery and bought the best of the five tastings. The color is a little yellowish. It has a fruity aroma like apples. When you put it in your mouth, you can feel the umami coming on. It is so delicious that you want to keep it in your mouth forever. When swallowed, the fruity aroma penetrates the nose. It disappears with a slight bitterness. When you taste it on the tip of your tongue, it really tastes like eating an apple. I like it.

In the mouth, you can taste the umami flavor, and it disappears with a hint of bitterness. The bitterness lingers for a long time. A refreshing sake. It fits the image of spring!

The label said, "Caution: May spew. So I loosened the cork in the sink, and it spewed out! It took about a cup of sake with it. I rushed to close the cork and then carefully loosened the cork to fully vent the gas before opening the bottle. It was not only slightly carbonated, but also highly carbonated, with the same sizzling sensation as Mitsuya Cider. At the Shichiken brewery in Hokuto City, my wife and son were recommended this sake by their sister, who is an expert in recommending sake, and as a result they decided on this one. The aroma of rice rises softly, giving it the image of a rice sake. When you put it in your mouth, the umami of the rice comes in and when you swallow it, it disappears, leaving only the umami. I was impressed by the use of good rice and water.

I went on a brewery tour as part of a company trip and was recommended to pay for a tasting by the cute lady who guided us around the brewery. It had a thick, cheese-like aroma and a flavor and richness that was not typical of Junmai Daiginjo-shu, perhaps due to the use of Yamahai. The guide that came with the bottle said it would go well with thick dishes such as stewed pork, and I agree. It is delicious.

Purchased at the Hankyu Department Store at Hakata Station on a business trip. I was looking around for Fukuoka sake, I was attracted by the words "limited edition sake". I found this at a convenience store in Toyama, where I was on a business trip! There were two other types of ginjo, a honjozo and a junmai ginjo, but I chose the ginjo in the middle because my boss was buying me a drink. As soon as I opened the cup, the aroma spread quickly! The subtle sweetness and umami spread in the mouth, leaving a strong aftertaste before disappearing. It is delicious! I think I will buy some as a souvenir for myself.
