I am not used to sake with high alcohol content yet, but the first sip immediately after opening the bottle was so stimulating and tangy on my tongue that it unintentionally brought back the sensation of drinking gin straight.
The first few days I enjoyed it with soda, but today I drank it as is and...what? It is mellow and easy to drink. The alcohol angle is gone and the sweetness spreads softly.
I was surprised at how much the same bottle of sake can change its expression after a few days.
I realized once again the depth of sake.
