It was my first time to try Usuzakura. I missed the chance to buy nama sake, so I bought hiyaoroshi. The rice is Ginfuki. It has a relaxed atmosphere. The aroma is a little fruity. It has a mild sweet umami taste. Is it sweet among the Hiyaoroshi?

#Otaru#. I was a lecturer at a conference for companies. In the evening in Otaru, we had a get-together with the participating companies. The sake served there was Otaru's local sake. I prefer sweet sake, but it was a bit... I felt the spiciness was strong for a +5 sake, maybe because it was junmai? Today, I had to travel from Nagasaki to Otaru, I was a little tired😅.

🏠 Drinking ( -̀ -́ )୨⚑︎゛ I didn't care for the aroma. Crisp ‼️ and no bitterness. Maybe a light acidity when paired with veggies😊. For the entrée... Yakitori with sauce made with rice wine 🐓. I'm not sure if it's a good idea to use it with vegetables Rice used, Miyamanishiki Yeast, Kyokai 701 Alcohol 13%. Personal preference among 4 types 4️⃣ I received a bottle of sake that has been stored at room temperature for a wacky long time... I tried to drink it but it was old sake ( ´-̥̥̥̥̥ω̥̥̥̥̥̥`) I got about 7 kinds of sake including Tasake and Jyushiyo... What a waste 😭😭😭 The sauce made with Tasake was delicious though 🥲.

Rice used is Yamae Nishiki It is supposed to be a sake that goes well with mushrooms, but in the end I did not pair it with mushrooms. However, it has a gentle sweetness, and it was just plain delicious. It also had a mushroom-like flavor, though it was only vaguely. Bitter and astringent tastes are close to that. It's a sweet sake, juicy, but clear and elegant on the palate. It was well balanced and certainly seemed to go well with mushroom dishes.

It's probably a minor brand in Japan, but it's been getting rave reviews around the blogosphere, so I set my sights on this one and bought it for this year's summer sake. By the way, are there really only 3 special dealers nationwide 😳 (PS: You indicated that you think there are 4) The aroma is mild and slightly rummy. When you drink it, there is a little ripe fruitiness, like orange or alcohol for a moment, then the umami comes, then a little bitterness, and then it starts to kick in. The sweetness becomes stronger on the second day and the impression improves. It is a bit similar to To Kaizakari, but not as sweet as To Kaizakari's Nama-zake. On the third day, it is heated to 40°C and 45°C. The first taste has a fruity or sugary sweetness. The sweetness comes out first, but then the spiciness comes out with a slightly ripe umami, and it becomes spicy and sharp. When cooled, it becomes sweet without losing its sharpness. It is best served warmed. It has a very high degree of perfection, and although it is 13 degrees Celsius, it does not feel thin. It is modern, but has a good umami flavor, and is medium rather than light, which is unusual for a low-alcohol sake. It's not obvious unless you are told that it is a summer sake, and it seems to be a somewhat modern all-year-round sake. It is very difficult to say that you dislike it, regardless of whether you are a modern or classicist. It is made in March and shipped in June, and seems to be slightly matured on purpose.

I was looking for a property today, but there was a sake store nearby, so I bought some on the way home! I didn't buy it this time, but it was a good sake store that also had Kuroryu and Hakusan ✨. I bought this after tasting it at the brewery that brews Diachiku in Chino City. It has no label on the front 😳it is a raw sake with alkaloids. Every December, locals come to buy this sake. It's been six months so it doesn't have a lot of pizzazz, but they say it's very stable. I first tried it cold. Alcohol content: 20%. The taste is pleasant, with a nettled rice flavor and a hint of sweetness. The spiciness that comes afterward is also nice. On the second day, we served it lukewarm. It was very tasty with a deep sweet flavor spreading through it. It makes you feel refreshed. It went well with the tsukudani (food boiled in soy sauce) of wakasagi (smelt) and sea bream that we bought in Suwa. This sake is good with hot pot and 🍢, and I would like to drink it in winter.

I usually prefer fruity sake, so it is not a brand I often get, but I happened to have a chance to try it. I had heard that most Hiroshima sake is sweet, but this one is basically dry in all specifications. The aroma of the opened bottle was pleasant, probably because it was a draft sake. As the +10 number indicates, there is no sweetness, but perhaps because of the aroma, there is no harshness from the alcohol. It is a nice sake that is refreshing and somewhat fruity. It is said to go well with sushi and sashimi, and it certainly does.

I've had Kanazawa-ya from the same brewery at an outing, but this is my first time drinking it. I had never heard of rice called "Takaneminori" before. It has a fresh aroma with a hint of cemedine. The impression is that it fades out after a pause from the refreshing feeling, followed by a gutsy sweet flavor. It is a new sake, but it has a strong umami.
