I think it's rare to find unfiltered raw ginjo 🤔. Slightly sweet and nutty. It has a strong sweetness and umami. It's a good combination of modern and classic without feeling like it's been alkaloosoaked. If the label is a little more modern, it will sell well. After 10 days, it became bitter and hard to drink.

This is a good sake. ❣️ It has strength and acidity that is typical of a sake brewed from a traditional sake yeast stock, and the aging process has given it a round umami taste. It has a moderate alcohol content, and this flavor is very relaxing. I want to drink it again!

🍶 Nagano. I got a PC to use on a business trip, so I was working on Sunday (company animal). I brought it to Nagano anyway because it might recover from a blue screen🟦. I wanted to talk about how I brought it in the heavy rain and Sunday's mess, but I had a lot of time for meetings on Monday. I was so tired on this business trip that I didn't have the energy to explore new places, so I went to a standing bar that I went to last time. Yeah, I'm fine with standing if I can drink 😆. From Daishinshu, which I was curious about last time I was here. Very, very, very tasty. Almost chugged it down😅. I'm happy to drink Kame no Umi again 😃. Beyond the first two, the most delicious sake of the day was "Seki". It is a sake from Meikyojosui sake brewery and is almost impossible to find. The store here also took a year and a half to get it after they found out about it. it's made in 2019 and aged, but the taste is more subdued than aged (I'm not sure about the vocabulary, but they said the lightness of Jun Dai is grounded, to bring out the best of Kinmon Nishiki) and the rice has a great flavor, not sweet or sour, but just... Delicious! It's just delicious! I had to have another one 😋.

This Sake has a full mouth feel with a strong flavor of cedar and apple. It is also dry with a lingering finish. This is a great with strong flavored foods like kakuni.

The fourth cup was "Asakayousei"! I was curious about this one, as I have only seen Shiga sake such as "Shichibonjari" and "Shoki Shoki". The aroma is apple-like. The mouthfeel is fresh, with a gaseous and hinted aroma that reminds me of a tank! The sweet and sour taste of green apple and the overflowing flavor is addictive ✨.

March 15. As it is a day of great luck, which comes only a few days a year, I went to visit my local Omae Ebisu Shrine ⛩️ The sky was clear and blue, the smell of plum blossoms was in the air, and I felt refreshed. I prayed for peace and gratitude. Third picture: Ebisu-sama, about 20 meters high The 4th picture, a motorcycle ema, is very rare 🙄. We stopped at a sake store on our way back home🤗. The aroma is mild. It has a very slight graininess, a slightly sweet and bitter cocoa taste, umami, and a firm acidity, and after swallowing it, you feel your throat get very hot. Perhaps it is the effect of the acidity, but the aftertaste is so refreshing that you do not feel the al 18 degrees.

This junmai ginjo is brewed with 55% Kame-no-o from Shonai-machi, Yamagata Prefecture, the home town of the Koikawa Shuzo brewery, and all the ingredients are made with a focus on local production for local consumption, emphasizing the local sake flavor. The sake rice is Kame-no-o, the ratio of polished rice is 55%, and the yeast is Yamagata NF-KA. There is almost no sweetness, but the umami of the rice and the acidity stand out 👍No sharp sharpness, but a gentle clean and crisp feeling is impressive ✨. It also looks good hot or lukewarm! A sake that would go well with Japanese food such as yakitori.

Cold. Purchased at Fukuda Sake Brewery. I bought a lot of it, so I drank it all at once to reduce the amount. It is a sparkling type, not too sweet, not too spicy, and easy to drink, but it has 14% alcohol content. I am not a fan of carbonation, so the carbonation was stronger than I expected, and it hurt my nose. I think I prefer Nagasaki Bijin if they are made by the same brewer.
