Chiba's local sake 🍶 I had bought it in early spring touring 🏍️... forgot about it... I was thinking of a traditional mellow dry taste... .... I forgot about it...I thought it was a hybrid of old-fashioned and modern...not much aroma...the mouthfeel has the old-fashioned mellow, mellow, umami taste.... It's delicious 😋 Hey...it's a good food sake 🍶 and delicious 😋! This one! I feel it's evolving and deepening...delicious 😋.

I've been wanting to try this for a long time, so I got a bottle of Sakyami. The aroma is citrusy and fruity, and the taste is sweet with a slight fizz. The balance of sourness and bitterness is exquisite...similar to Machida Shuzo? This dangerous sake is 100% Miyamanishiki...delicious...I want to try the other Sakyamishiki!

Every time I went to the store, the staff kept asking me, "How do you like Sakuyami?" and I finally buy it ❗️ I listen to what the shopkeeper says, it's delicious 😊. The moment you put it in your mouth, the sweetness spreads, and soon it has a slightly stronger acidity and a pleasant petitiveness, I think it is OK both on its own and as a mealtime drink. I thought it was a combination of Hanahayo and Shinsei colors. This is my personal opinion, so please forgive me if you like HanayoYoku or Shinsei. I would like to try other Sakiyami as well 😋.

☀️ First time drinking sakijabi ✨ in the fridge for a little over a month in the fridge for a little over a month😅. It is 100% Miyan Nishiki🌾 The top clear... I've been drinking it for a little over a month now. I'm sure you'll like it. I can't believe it. It's so easy to drink! If you mix it, you still get the alu feeling and what's more... The texture is deep but not heavy 🙂 . The bitterness is light and refreshing... no, it's good✨. Next time when I'm sober😢. I'm looking forward to tasting this one again❣️🤗

It is the first Kamikawa Taisetsu. I was attracted by the white koji and bought it. The aroma is of citrus and lactic acid, with some caramel. In the aftertaste, there is a touch of vinegar. So, of course, the sourness is dominant. There is also sweetness, but it is characterized by a sharp acidity. The aftertaste is also sour. The umami is mixed in there. This is another favorite of mine, Yamama, this time an active junmai ginjo. The lid almost flew off! Close it immediately! I was so close... 5 minutes after opening the bottle, the taste is sweet and bitter with a strong bitterness and sparkling rice... I can't believe it's a sake anymore... delicious... and I can drink it again at 🙆♂️ as a food sake! I want to drink it again!

(ますますます +. We had Takasago from Kiyamasa Shuzo 😀. It was completely different from Jikan. I'm not sure if I'd drink it with refrigeration, or if the aroma would be milder. No? I'm not sure if it's too acidic or not when I drink it 🤔. I didn't like it, so I heated it up and it turned into a different kind of sake. I found the heated Takasago to be delicious 😀. At home. I️ watched the hot battle for the high school baseball autumn season Kinki tournament at the Wakayama Kimiidera stadium. On the way home, I️ bought my first "Imanishiki" at Sakeya Kagimoto in Wakayama City. I️ bought Nagano Prefecture's sake in Wakayama Prefecture⁉️. And today, I opened the bottle. It has a gorgeous aroma, a smooth mouthfeel, sweetness, umami, and a bit of acidity. It has a fruity feeling in the nose. It is not too sweet and has a moderate dry taste. My favorite team lost, and I was feeling hopeless about the Koshien tournament, so I thought I would be a little burned out, but it was very tasty and comforting. I knew it was Nagano sake, and there is no mistake.

My favorite Chiba sake "Iwanoi" is brewed with ultra-hard water (hardness 240). It has the delicious flavor of Omachi and the moderate bitterness and sharpness of hard water! The taste is deep and the acidity is dignified! It can be drunk as it is, or as a food sake...no...food sake🍶 is better 🙆I'm sipping it with boiled gammo and sashimi...🙆I'm sipping it with a side dish.

There are only two sake rice study groups left. I've been posting them chippy-chippy, so my notes and my memory are no longer connected. But there is no doubt that they were delicious. The ninth bottle was Kami no Ho from Mie Prefecture. The first bottle was a Saku no Kami no Hoho, which got me hooked on sake rice, but it tasted completely different. The aroma is banana, I guess. It has a slightly sweet taste with a refreshing dryness from the microbubbles. It goes on and on... a never-ending type of sake. The next post should be the last in this study of sake rice.

Special Junmai Nigori Nama-zake🍶Kami-no-ho🌾 from Mie Prefecture. Seme smell, fresh✨, a little schwag. Sour and spicy. Mustardy 🙄 according to my wife. When paired with the koji-marinated squid (🦑), it takes the edge off and cozies up to you. The power of koji is amazing 😆. Looks like a new brand to be born in spring 2023. This Sake is a nice change from what I have been drinking recently. It has a sugary sweetness similar to a ripe muscat. There is a Medium mouth feel followed by a slight dryness at the finish for a clean aftertaste. Delicious. 😋
It is refreshing and easy to drink. The menu said it was dry, but I only felt a slight spiciness in the aftertaste. We were about to eat fried food, so it was a perfect pairing 😆.
