Junmai Ginjo Genshu with 55% polished rice. It is full of freshness because it is Arabashiri and of course the aroma is very strong. When you pour it into a glass, it has a light cloudiness characteristic of arabashiri, with fine bubbles - it has a gorgeous ginjo aroma, with notes of green apple, white peach and green melon. When you drink it, you can feel the fine bubbles through your throat and it is very fresh. It's delicious!

October 31, 2023 Japanese Sake and Japanese Cuisine at Miketsubi in Matsuyama City. The 7th glass was served on recommendation with rice and hops. It has a clean and gorgeous taste with acidity and a pleasant hop aroma. The aroma of hops is pleasant. Pione and Cheinmuscat. I enjoyed it with Pioneer and Shine Muscat.

The bottle was opened without any sign of carbonation. The whey-like smell is gorgeous. The taste is dry and rice-like. It finishes with a sense of rice and acidity. It is a taste you can find when you drink orikara-mi. The sweetness is added by mixing in the ori that has accumulated at the bottom, and it is just right. It is delicious. As you get used to drinking it, it becomes more familiar to your tongue and you can drink it in large gulps, and it is irresistibly good as you continue drinking it. It tastes even better after a year in the refrigerator, but I can't wait that long.

I noticed after I bought it that it was manufactured in 2017.3 and shipped in 2020.9. ????? The first day I opened the bottle, I thought it had an unusual taste. The flavor and acidity are amplified. A mini-bottle of Kamelei Junmai Ginjo given to me by a friend who lives in Hiroshima. The supercilious aroma is of a faint apple-yellow flavor. I posted offline and forgot to put this 💦. First time for both Ippongi and Denshin. I thought I could buy them anytime and I avoided them because of their dry image😅. The top aroma is like pineapple and tropical fruits. The initial aroma is like pineapple or tropical fruits. The second half is quite spicy though it has fruity and soft sweetness. I wonder if the softness is due to the fact that it is bagged.

Closing out the drinks we had last weekend 😆. Smell good 😌. The Mikotsuru was quite rich and sweet, so I felt a lot of sourness when I took a sip 😳. The more I drank, the more umami and the sourness and aliveness were also good 👍 I can feel the strong aroma of the barrels! Is this a dry wine? and Nobby Well, I guess it's umakuchi. It is labeled 18 degrees, but you don't feel it. I thought it would have been better if it was warmed up to lukewarm 🤔 I thought so later, but I finished it before I realized it 😆. But I drank a little too much from Thursday to the weekend 😓. I'll enjoy a quiet rest day for the first half of this week 😮💨.

Tonight, I'm opening a bottle of the first bottle of Masamune instrument for the weekend dinner because it's so good it's about to run out 💁. Shikishima Light Nigori Nama Sake 2022BY Back on the nigori road a bit, but again it's almost a year old 😅. When I opened the bottle, I could hear the gas escaping with a nice sound. The aroma is mainly chemically aromatic, with a hint of greffle skin and a little bit of maturity. The mouthfeel changes from sourness and citrus bitterness to bitterness, umami, and spiciness. The alcohol content is 18%, so it has quite a punch, but the sweetness and umami from the aging process gives the impression that it is more rounded. It's good that the lees are so cloudy and the umami and richness is so much better 😊.
