Since I was also visiting Kyoto, I had a second glass of "Ginshari", a Kyoto sake. The aroma is faintly muscat-like. The mouthfeel is refreshing...but then the mellow sweet, sour, and astringent taste like grapes spread out in a sizzle. The difference between the naming and the taste was a betrayal in a good sense! The slight chilliness of the gas also gives the wine a freshness👍.

Onra Yamadanishiki Junmai It seems to be named after an ancient demon from the Kibi region in the southern part of Okayama Prefecture! Kokuwaku 😱. 80% polished Yamadanishiki produced in Kume Minami-cho, Okayama Prefecture. Dry taste Grain taste Slightly old sake aroma Personally, I didn't like it 🥲. Sanzen Yamahai Junmai Omachi Nama-nara Sake This is a sake from Kurashiki. Made with Omachi, the pride of Okayama Prefecture's sake rice. Not fruity, but umami type. It has a classical grain-like taste. The acidity is unique to the Yamahai brewing process. Thick and rich. When we went to Kurashiki, she rented a kimono and we went for a walk 👘.

The first Matsumine no Fuji. Low milling of 77% Dewanosato rice from Yamagata Prefecture. The top aroma is sweet and fruity. The aroma is reminiscent of pears and peaches, and is so gorgeous that it is hard to believe it is junmai. The taste is not as sweet as the aroma suggests, and the mouthfeel is clean with a touch of umami. There is a faint bitterness in the aftertaste, but it is not difficult to drink. There is also some fresh gassiness from the secondary fermentation.

Ayaka-gun, Kagawa Prefecture. Yushin Brewery Co. Yushin Namaishu Junmai Ginjo No. 9 Yeast We are back to drinking at home. Purchased on a trip during Obon. I jumped on a label I'd never seen before and neglected to check the date, and found out that it was February 💦. I drank it cold. Not much Uitatekoso, but there is a slight graininess, with a hint of alkaloa. No mature-like aroma. The mouthfeel flows smoothly on the tongue, and the taste is full and full of rice flavor with a sense of maturity. The aroma that passes through the nose is a little matured, so it has matured a bit. But it just has an autumn-aged look to it 🤣. As the label on the back of the bottle says it is slightly dry, there is a bit of spiciness at the end, but I don't mind it too much because the umami is very strong. The high alcohol content makes it easy to drink, but it comes back with a thud later. I would like to try a freshly brewed sake once.
