I've been making my way to restaurants with good service lately. Today they served me a fresh aged sake. Today is February 6. This is my first Kinkame. My first impression was that it was very good! Next, it has a strong umakuchi taste. The acidity at the end is good, just like Yamadataro. It is like a light kijoshu, and it is delicious. Shiga is nice.

It's 3/9, the day of the crop, and I don't have it on hand... I should have left the one I bought in Mie😅. I bought it in Wakayama about 6 years ago. Ozaki Sake Brewery had never been out of Wakayama prefecture, but a liquor store in Osaka started doing business with them, so I went to buy some. According to the liquor store, they had already been getting it through a wholesaler before. It seems they use a yeast found in the soil of Kumano Kodo. I like that it has a serial number 😁. Sweet and sour, with a touch of Yamahai in the second half, but the last half is very dry! I'm a little concerned about some off-flavor nuances... A few hours after opening the bottle, it started to get a little smoky 🤔. After about a week, the off-flavoriness and the smokiness are gone and it tastes better.

The sake is brewed by "Toroki Shouten", a sake brewer who was involved in growing the rice and brewing it together with Wakatakeya Sake Brewery.
