Today, I'm going to raise something I used to drink and kept proper records of. I drank it at a restaurant when I was on a business trip to Osaka and thought it was delicious, so I looked for it myself and bought it. It was labeled as dry, but it had a clean, easy-drinking taste with a slight umami flavor. It goes very well with sashimi. Very tasty! (^O^)

I bought a bottle of Ayagiku's raw sake because it seems to be rare. I bought it at Okura Sake Shop in front of Tamatsukuri Station. It is a new store opened this year. They seem to carefully select and handle brands that are not found in the Kansai region. They have a wide selection of sake brands such as Rairaku, Kinshi Morinori, Shonosato, Hizen Kurashin, Chitose Mori, Kikunoi, Hakuryu (Fukui Prefecture), Ayagiku, Hanashimi, Zoka, Morinokura, Rokkasen, Tenzan, etc. Sake made with Sanuki olive yeast. Fresh, rich, sweet and acidic. The acidity is impressive, but there is also a bit of spiciness in the latter half. It has a light mouthfeel for its alcohol content, perhaps due to the acidity. It does have a slightly tropical flavor.

It is not flashy or gorgeous. Elegant and understated, it is a sake like a Yamato Nadeshiko.

Last sake I bought last year as a Kumamoto souvenir. If I have a chance to visit Kumamoto again, I would like to visit Aso and Kikuchi area 😌. When opened and poured, it has a sweet aroma like sugar and sugarcane. The mouthfeel is crisp and immediately afterwards has the plumpness of rice plus the sweet and spicy taste of brewer's alcohol. The aroma is like melon🍈 or pineapple🍍😆. When you drink it, it is moderately sweet and very easy to drink👍 But I've never heard of rice called mizukagami 😅. I️ don't know the characteristics but it was a delicious sake that was easy to drink.
