The 43rd sake brewery in Gifu Prefecture. Gyokusendo Sake Brewery's main brand in Yoro Town. Purchased at a roadside station in Yoro Town. It is made from 100% Hida Homare, Gifu Prefecture's preferred rice for sake brewing. The aroma is an apple-like ginjo aroma. It has a weak acidity and a weak sweetness from the umami of the rice. The lingering umami flavor lingers until the end.

A sake that has won various awards. There are many, so check it out yourself! The aroma is fresh and elegant sake aroma. And what is worth mentioning is the taste. You can taste the sweetness of apples and white peaches and the refreshing acidity of pears. Very fresh and fruity. The aftertaste disappears quickly. A refined, fresh, and lush sake. I would like to give my personal impression, so here is my general comment. Overall review ~ S~. If you like sweet, fresh, fruity and refreshing sake, you should try this. I don't want to say "this one", I want you to drink Akashitai. It is a gem that should be enjoyed not only by drinking, but also by rolling it around on the tongue like a wine. Get it at "Marugoto Kochi" in Ginza, Tokyo❗️. I had never heard of this brand before, but it was delicious ❣️. The rice used was something from Kochi Prefecture. It has a fresh citrusy taste like a fresh sake, with a rich mouthfeel, but it goes down smoothly. The aftertaste is clean and crisp. If I had to say something, I would say that I would like a little more sweetness, but it is just right for light drinking.

Second day of Kochi Night. The cab driver told me that Hirome is good, but for bonito, I should go to Matsuri Jaya. He advised me to go to Matsuri Jaya for bonito, as it has a good selection of alcohol. So we went to Matsuri Jaya. At first, we started out with regular sake, just like a normal drinking party in Kochi. The staff at the restaurant recommended various temperatures for drinking. The first sake is Fujimusume, which I have never tried before. Slightly spicy and umami-guchi (flavorful), it was a perfect match for the thickly sliced salt cod roe. The special sake cup is also cute! But from here, I sank into the swamp of Kochi sake.

#Funabori# A bit of a bad look 😅. Homemade sundubu jjigae with a side of homemade sundubu jjigae. We had this one. The sundubu jjigae was I kept the spiciness low so that my family could also enjoy it. I made the best use of the soup stock of shijimi clam. The sake does not have much rice flavor 🤔. Maybe because it is a ginjo sake. It is quite light.

I'll have a glass of Hanabayo's "Silk" ✨🥂✨. Mild ginjo aroma When you drink it It has a thick and mellow mouthfeel Sweet and fluffy It is full of umami. In the latter half, the sourness comes from the umami. Then it finishes with a kick. After swallowing, the chest is chilled. If you combine it with pear Hmm? It was a bit salty and sour! When I combined it with Satoya's "Tamayura"... It's so good 😘! I loved this pairing 💕 By the way, "Tamayura" is... A famous Yamagata confectionary "Noshibai" made with white bean paste and agar, topped with Japanese raw chocolate. Very delicious 🥰. For lunch, I had a quick ramen (ramen).

I bought this Wakaba unfiltered sake in the summer and felt it was still young, so I let it sleep in the closet. It has a good balance of flavor, with the punch of unfiltered sake, but without losing the simple country feel of Wakaba. I put it in the closet again, but it was good enough. It's not Wakaba, but Higuchi Shinyo, a triple axel that is anything but rustic! The ROC is still very difficult, but I hope the Japanese will do their best to get on the podium!

Yahiko Sake Brewery in Yahiko Village, Niigata Prefecture. The main brand was "Echino Hakusetsu," but it appears that "Yahiko" will be the main brand from now on. This Junmai Ginjo is also made from Yamadanishiki produced in Yahiko Village, and is a good sake, not fruity, but calm and soft. Yahiko Village is where my mother is from, and I spent a lot of time there as a child when I was sent to my mother's home, so it is like a second home to me. Yahiko Shrine, the first shrine in Echigo, is located there.
