Junmai Daiginjo🍶Non-filtered raw sake ✨Hattanishiki🌾. Inariya original Saitama local sake 2024-2025 special limited brew ✨shiboritate shinzake hanpukai🎉A bottle of the coming year version. My wife said I thought it might be sweet, but the acidity came and went and the water. Beautiful and good 😋 balance of spiciness and acidity👍. The aroma is melon 🍈, and when you put it in, pineapple 🍍, it goes in sweet but the spiciness continues. It spreads on the palate and disappears after a while. It takes grilled fish (sea bream version) well. The green bean miso mayo mellows the flavor. Purchased at Inariya Espoir Sake Shop @ Urawa, drinking at home 20250202

This is my sixth submission from the San Francisco Bay Area. Silky mouthfeel. A fresh junmai daiginjo that I have never felt before. It goes down smoothly but also has a sweetness. Wonderful. Goes well with cold yellowtail sashimi and Kyushu barley miso-based bacon-potato salad.
