Today I am Beian Daikoku Anniversary😇. This sake is a project with Hata Sake Shop and the sake brewery 😀. I saw the brewery's installment and even though I didn't know which brewer's sake it was, I pre-ordered it 🤣. Rafa papa has already written about the detailed taste, so I'll skip it, but anyway, it was a very round sake with no curd at all😇. I guess when you let it sit in the snow slowly, it becomes such a round and beautiful sake😇. It was delicious 😀.

I've been curious about this for a while, but this is my first time in Beian Daikoku. The rice is Hitogokochi, though it is not written on the label. Juicy sweet flavor. It is juicy, sweet, and delicious. It is fruity but not too fruity. It is not flashy, but it has a gentle taste that you will not get tired of drinking. It is said to be -9 in Sake meter, but if that is the case, it must be spicy. I think it tastes sweeter and stronger after a few days.

"The new label on the hammer is also a good omen! May good things come to you!" I've been looking forward to the Hokuyasu Taikoku. It was my first time drinking this brand. The rice used is Hitogochi. The rice polishing rate is 59%. The number 9 at the end is a unique Nagano style! Not much aroma, but refreshing. A little effervescence. Okuni Junmai Ginjo Kotani-Nishiki 720ml Rice used: Shirakaba-Nishiki from Kotani Rice polishing ratio 59 Alcohol 15%. Purchased at Ishikawa Shoten in Kotani Village. It is a liquor store with a relaxed atmosphere. It is called Kotani Nishiki because it is made from rice grown in the terraced rice fields of Kotani Village. I have seen comments that it is light and dry, but compared to other Okuni's, I would classify it as sweet. Lately I am getting addicted to this mild sweetness 😄. I'm not sure if I'm a fan of this kind of sake, but I've never heard of it before 😃.

☆☆☆☆☆ Summer drinking season already? I haven't even put the heaters away yet... Citrusy lemony acidity typical of summer sake Is it too early in the season? Taste like it's still early in the season... A little sweet and sour later on... It does not have the richness and flavor typical of Hokian Daigoku, but is more like a summer sake. But it is delicious because it is not overly sour.

Hokuan Okuni Next Batter Junmai Ginjo-Ginjo-Harajyunshu, stored in snow 720m Rice polishing ratio 55 Alcohol 14%. This is the one we brought to Miyajima-san last autumn, as we found a lot of them lined up on his counter. It was stored in snow in 2023 and shipped from the brewery in September 2024. After that, it was stored at home. It has a good sense of maturity. It is not colored, but the sweetness and acidity have increased, and it is so rich that it is hard to believe that it is 14 degrees. Sake changes in many ways. I am looking forward to seeing how this year's next batter will turn out 😋.

Hokuan Okuni Junmai Unfiltered Nama Shu (Unrefined Nama Shu) 278 Rice polishing ratio 59 Alcohol content 16%. This was found in the refrigerator of a liquor store near Hakuba Station. There was no front label, just a three-digit Chinese numeral tag? When I asked the store staff about it, all they said was that it was a limited edition 😅. I opened the bottle while it was still in my memory of the last Beian Daikoku. It still starts with sweetness. However, it has a longer aftertaste than the last one. I searched a lot for this sake on the net, but no hits 😭.
