The fresh, sweet and sour taste with the roughness characteristic of new sake is a treat only available at this time of year. The aftertaste is slightly bitter and fresh, freshly pressed new sake.
It has a gorgeous, sweet aroma.
The mouthfeel is fruity and juicy.
It is like a white wine.
The sweetness and acidity are strongly felt. The umami is light.
The slight bitterness and lingering aftertaste give the impression of sake.
The low alcohol content makes it easy to drink, so you can easily finish a bottle.

Hokayasu Okuni: Junmai Ginjo-Ginjo-Hara-Shu aged in a kura.
I drank it for the first time, but it is so delicious!
The aroma is rich caramel.
The mouthfeel is very mellow and has no corners.
The inside is well balanced with no cloying taste and a strong umami flavor.
The aftertaste is dry and sharp.
Very tasty mellow dry taste. For entrée, we paired it with "sweet pickled turnip", "pickled nozawana", and "miso cheese" that we purchased at a Nagano antenna store, and the main course was sukiyaki, which all went well together.
I am grateful to have met new sake!

We went to the Kitaan Okuni brewery's direct sales area.
There was a limited edition sake called "Totteoki" that is not normally distributed, but this time I went for the new sake Shiboritate.
I opened the bottle as soon as I got home. What's that? Maybe it is less sweet than usual.
Yesterday, on the way from Nagano to Hakuba, I decided to stop by the brewery's store and took the road to Omachi and went up the mountain. Gradually, the road surface became icy in the shade. The road surface was completely frozen on the way up the mountain. Even with studless tires, it was impossible. We chose the road down to Lake Kisaki on the right.
However, the road was so narrow that cars could not pass each other on the way down, and it was frozen and slippery in the shade, so we went down praying that no oncoming cars would come. I was relieved when I saw the national highway. If you follow the navigation system, you will be forced to go over the mountain without any problems, so be careful in winter.
When I was talking about the slippery mountain pass at the store, they recommended the online shop😅.

This was served at Hakuba Roadside Station.
As commented on the back label, it is fruity among Kitayasu's products. I think this one is more popular with everyone.
This year, I got hooked on Kitayasu-san's sweet and delicious taste and had a variety of them.
At first, it was very strange that there was such a difference between sweet and dry, even though they are neighboring prefectures and Omachi is the nearest Shinshu across the Kuroshi Dam.
After this, I am looking forward to various new sake until the end of the year 😋.
The top aroma is sour. It is served lukewarm first. When you drink it, it has a soft, acidic taste and a crisp, slightly dry image. It is delicious. The aroma is pure rice. When the temperature is raised to kamikan, the sweetness comes out and it has a sweet and sour image. I prefer it lukewarm. Even when warmed, it has a distinctive acidity. It is good on its own or with food. Went well with simmered flounder and meatballs.
