So, after a long time, I had Hitogokochi's Shinshu Kameiring!
This sweet, fruity, sweet-tasting sake soaks into my tired body!

Shinshu Kamerei Junmai Ginjo Hitogokochi Unfiltered Nama Sake
Time goes by quickly, thinking that it is better to drink the unfiltered, unpasteurized sake as soon as possible.
I drink it cold.
When I pour it into a glass, a little foam adheres to the sides.
The color is clear with a slight silver tinge.
The top aroma is greenish, like melon, melon, and young peaches.
There is a pleasant gassy and juicy feel on the palate.
The taste is clear and refreshing, with a moderate sweetness and umami.
The aftertaste is a bitter bitter flavor that lingers on the tongue, with a bit of caramel in the middle.
I think it is too bitter, so I wonder if I let it sit too long.
Short aftertaste with a slight pungency.
Good on its own, but better as a food sake.
As the temperature rises, the sweetness and bitterness are well balanced, so I think it is good on its own as well.

Rice polishing ratio: 55
Alcohol content: 15%.

I don't remember where I took it last year, but it was probably in Ueda.
This one is fire-aged, so it was perfectly safe to store in the refrigerator at home.
By the way, during GW, I visited Yaebaru, Ueda, Chikuma, and Himekawa liquor stores. By the way, we went to Yaehara, Ueda, Chikuma, and Himegawa liquor stores during GW.
My wife asked me, "Do you still go to liquor stores? We still have plenty at home, don't we? She was so disappointed. So, naturally, we wanted to eat Shinshu Soba. However, we became refugees from lunch, and we could not even park at two of the restaurants. But after us, there was a sign saying that the restaurant was sold out. We were just in time.

Manufactured in December 2024. Stored in the refrigerator at home for 4.5 months. We were worried about its freshness since it is not kept in a chilled room, but it is just barely fresh.
My wife said it was a little different from usual.
The lightness is a little less and a little more medium 😭.
I don't know if I will be able to get a fresh one next season, but I will follow the comment on the back label and either keep it in a chilled room or drink it as soon as possible without wasting it 😅.
