I stopped by the brewery on my way home from a GW event and purchased some sake🍶.
100% Yamae-Nishiki produced in Nagano Prefecture
The color is clear.
Not much aroma.
On the palate, it tastes like green apple🍏. It has a subtle and elegant sweetness and a gentle acidity.
The mouthfeel is super slightly carbonated and slightly stimulating ✨.
Slightly bitter aftertaste.
Cool and light, yet noble 🍶. ヱセ飲ん兵衛I bought it at the local Okazaki Sake Brewery's direct sales store.
I realized that when I took the picture!
I thought I bought Miyamanishiki, a brewery limited edition, but it was Yamadanishiki (lol).
Oh well. I'll go back and buy some more.
So I opened the bottle.
It has a slight gassy feeling.
More importantly, it has a fruity sweet aroma that only Yamadanishiki can produce.
The taste is also well-balanced and sweet.
It is so delicious that we regret that we can only buy it in a No. 4 bottle!

We paired it with Fukimiso (Japanese sweet bean paste), Wasabi leaf in soy sauce, Gyoja garlic in soy sauce, Salmon toba, and dried mackerel.
