Slightly fruity smell. Softly sweet and light in the mouth. The mouthfeel is reminiscent of rice, with an extended acidity, a slight sweetness, and a bitter taste that fades away. It is delicious. The impression is gentle. The third day. It tastes better when it has been open for a while. After the light fruitiness, the water is a little sour, a little bitter, and clean. Not too much of a bad taste, just a good feeling.

Nagano sake is delicious 🍶, and my favorite Shinshu Kamerei and Hitogokochi are my favorites. .... Fruity aroma, sweetness of rice, good bitterness in the aftertaste, and a nice sharpness! Nothing to say about it, roast pork and local edamame (edamame is in season) to go with it. .... Next time, I'd like to pair it with Shinshu soba noodles...

I love ❤️ Shinshu Kamerei, which was sleeping in the fridge! The mouthfeel is sweet! However, the aftertaste is exquisitely bitter and sharp! This is it! I can't believe that rice can be expressed like this 😋 It's really delicious 😋 Anyway, it's .... There is no bitterness! I wonder if it's buckwheat noodles since it's a Shinshu sake (....) It's delicious to drink as it is....

Shinshu Kamerei Hitogokochi Junmai All-you-can-drink sake course at Daigo Kanazawa. Last order for all you can drink for 90 minutes. Let's start with Shinshu Kamerei. Hitogokochi Junmai Hi-ire, made in June, but they said it just arrived recently. There was a premium one sitting in the counter fridge.

Today, safely at our house. Shinshu Kamerei's new sake has arrived at our home. Thinking back to this time last year, I wanted to drink Shinshu Kamerei, but I didn't have any sake at all, but I made friends with Rafa papa at Sake no Wa and he introduced me to a store that handles their sake. Rafa papa seems to have gone through a lot of sadness, but I hope he will make a full recovery soon 🙏. Today, with the arrival of new sake, we opened a bottle of this fire-brewed Hitogokochi, which had been stored in our cellar for a long time😇. This is really just Junmai sake❓😅 Today we compared it with Junmai Daiginjo Tasake and Kangiku, and it has the same Ginjo aroma and first attack as the Jun Dai 💕. The other day As Aladdin wrote in his comment on Jigokin Nigori the other day, the words "popular sake has a good reason for being popular" were exactly right 😇. I'm looking forward to drinking the new sake now 😀!

Shinshu Kamerei - Yamae-Nishiki Junmai Ginjo Unfiltered Nama-shu 720ml I went to Yanagimachi. There was no green label, just this one and a sweet sake. There was no announcement this year, but it is made in November, so maybe it is a new sake? I opened the bottle as soon as I got home from my trip to Shinshu... fresh & fruity, slightly sparkling ✌️, stable and tasty and comforting 😉. I will work hard again 😆.

Shinshu Kamerei, higher than Hexagon, which seems to be for export only. The specs are the same as Ginkame with 39% Miyamanishiki. The aroma is milder than expected, with a delicate scent of melon peel and guava. In my usual wine glass, the aroma is more floral and sweet, like melon. Ginkame was more apple-like, so I hope I can differentiate it from Ginkame. The wine glass tastes a little carbonated, and the sweetness and acidity are relatively strong and fruity. The Shuwan has a more mellow, umami-forward sake-like flavor. Both are delicious, but each has its merits and demerits. The first glass is a glass of wine, and then you can drink it in small sips with Shuwan. Anyway, it is a wonderful sake with a perfect balance that is typical of Shinshu Kamerei.
