Slightly fruity smell. Softly sweet and light in the mouth. The mouthfeel is reminiscent of rice, with an extended acidity, a slight sweetness, and a bitter taste that fades away. It is delicious. The impression is gentle. The third day. It tastes better when it has been open for a while. After the light fruitiness, the water is a little sour, a little bitter, and clean. Not too much of a bad taste, just a good feeling.

Nagano sake is delicious 🍶, and my favorite Shinshu Kamerei and Hitogokochi are my favorites. .... Fruity aroma, sweetness of rice, good bitterness in the aftertaste, and a nice sharpness! Nothing to say about it, roast pork and local edamame (edamame is in season) to go with it. .... Next time, I'd like to pair it with Shinshu soba noodles...

I love ❤️ Shinshu Kamerei, which was sleeping in the fridge! The mouthfeel is sweet! However, the aftertaste is exquisitely bitter and sharp! This is it! I was able to buy two bottles of Shinshu Kamereizan Keishiki🐢 this season. It is still outstandingly good. It is a very sharp sake with a moderate flavor other than sweetness 🍶. Now, I am planning a trip to Nagano in the winter, can I visit Okazaki Sake Brewery for the first time ⁉︎

One made in 2023. I drank it on August 12, 2025, a long time after that. To be honest, I don't remember much from that time because I buy it every year, but I have a feeling that it is getting harder and harder to buy every year. On the first day, there is a soft smell of pineapple. It smells almost like apple. But on the third day or so, the pineapple aroma becomes more and more intense. Surprisingly, even after more than two years, it still tastes juicy and tangy on the palate! And not only that, it has a pleasant sweet and savory flavor. Moreover, it has a very soft mouthfeel, so you can't help but drink more and more of it. It is the kind of sake like Jyushiyo, Jikin, or Hanaoyokko. So I think it is a sake that almost anyone can drink and say it is delicious. This is a particularly wonderful gem, with an elegance that is gorgeous and fresh, yet has a softness.
