This is the first new sake from Shinshu Kamerei. It is an unfiltered, unpasteurized sake brewed using all the "Hitogochi" rice suitable for sake brewing in Nagano Prefecture. It has a beautiful and elegant taste with a slight gaseous effervescence. It is an excellent match with meals.
Kamerei's alias "Gingame" is a Junmai Daiginjo brewed with 100% Miyamanishiki, a representative of Nagano. The rice is polished to 39%, the alcohol is 15%, the sake degree is slightly sweet (-2), and the acidity is also undisclosed.
I bought it at a regular price at my favorite sake store after obtaining the right to purchase it through a fair lottery draw without any favoritism.
When we opened the bottle, we could smell the wonderful ginjo aroma spreading throughout the room.
The fruity aroma is strange for a Miyamanishiki sake.
One sip and you will be filled with flavors of muscat and young melon.
Here is my personal opinion.
Sake is nowadays drunk by both men and women, and I think it is out of place to discuss the taste based on gender, such as "women prefer Gingame" as an example.

Yesterday I had a drinking party and before the party I happened to find a restaurant with a wide variety of Japanese sake! The space is very small, but there is a wide selection of sake, perfect for an after-party. And here is the first one! Yamae Nishiki from Shinshu Kamerei! I never expected to find Kamerei here. The aroma is apple and muscat. When you drink it, the sweetness spreads as usual for Kamerei, and then the chirichiri-ness starts. The umami and acidity come out moderately and it has a nice sharpness. It is a very beautiful sake! Delicious 😄.

The last bottle I bought on my trip to Shinshu, which I had been putting aside since last summer. I applied for the "Secret Shinshu Sake Hanpukai" this season and received a bottle early this week, so I opened it this time to replace the old with the new 😁.
The taste review is not much different from the last one, but the gassiness is a bit weaker and the taste is more rounded 🤔The aftertaste is still pleasantly intoxicating 🥰.
The entrée was sashimi of [Echizen Yanagi-Hachime] and [Mikuni Hirame] since the local fish was fried this time. 🐟️
The picture doesn't show it, but it goes well with Yakitori (grilled chicken) 😋.
