The strongest bubbles in my history! Light, dry and slightly dry. You can taste the umami of rice, but the lingering aftertaste quickly disappears. A delicious sake that is very easy to drink! After a few days from opening the bottle, it loses its freshness and becomes fruity and elegant.

profile iconI went to the Ayu Masamune Fair starting today. I ordered a very limited set of sake to compare. Junmai Daiginjyo Nama Sake "Ayu" is indeed a junmai daiginjo, and I can only describe it as delicious. It has a mellow mouthfeel, mild flavor, and a bit of acidity. The next sake, unfiltered junmai nama sake "AYUMASAMUNE" is as delicious as the jun Dai. It is mellow, acidic and full-bodied, with the difference being the junmai's lack of over-polishing. Then there was the junmai nigori sake "Sakororo," an alcoholic amazake with a refreshingly sour taste. Of course it was delicious. Finally, I ordered a separate Junmai Ginjo "Hatsuayu" that I wanted to try from the standard set. It was both sweet and sour, and had a refreshing taste like a junmai ginjo. After that, we visited Hankyu Umeda, Hanshin Umeda, Daimaru Umeda, Yamanaka Sake no Eki Marche, and also visited Edion Sake Store and Sake no Yamamoto! Whity's Niigata Okome had a lineup of Sake-no-jin limited edition junmai and junmai spring-fermented sake. I would have brought him home if I had less stock at home....
