The rice used is 100% Takananishiki, and the polishing ratio is higher than that of Manju, which is a high-end line.
The aroma is of the light, dry Niigata sake of yesteryear, but with a hint of matured sweet grain 😊The taste is a perfect complement to Japanese food as a mid-meal sake, with a sharp aftertaste, but with a soft, full-bodied rice sweetness that is delicious in its own right 🤤.

There are aromas of mitarashi, cooked rice, pear, and honeysuckle. The attack is rather weak, with mild acidity, residual sugar and a rather long finish.
I went to the Ayu Masamune Fair starting today. I ordered a very limited set of sake to compare.
Junmai Daiginjyo Nama Sake "Ayu" is indeed a junmai daiginjo, and I can only describe it as delicious. It has a mellow mouthfeel, mild flavor, and a bit of acidity.
The next sake, unfiltered junmai nama sake "AYUMASAMUNE" is as delicious as the jun Dai. It is mellow, acidic and full-bodied, with the difference being the junmai's lack of over-polishing.
Then there was the junmai nigori sake "Sakororo," an alcoholic amazake with a refreshingly sour taste. Of course it was delicious.
Finally, I ordered a separate Junmai Ginjo "Hatsuayu" that I wanted to try from the standard set. It was both sweet and sour, and had a refreshing taste like a junmai ginjo.
After that, we visited Hankyu Umeda, Hanshin Umeda, Daimaru Umeda, Yamanaka Sake no Eki Marche, and also visited Edion Sake Store and Sake no Yamamoto!
Whity's Niigata Okome had a lineup of Sake-no-jin limited edition junmai and junmai spring-fermented sake. I would have brought him home if I had less stock at home....
