The label says it is dry, but the sweetness is present as well, as it is a Kudokibe, which is rumored to be sweet. The fact that it was not overly sweet or spicy made it easier to feel the richness of the sake. It was easy to take the next sip. This time I drank it chilled, but next time I would like to drink it at room temperature. I would like to try Kudokutei, which is not a dry sake.

The first try of the newest Shinmasa No. 6. The aroma is elegant and gorgeous with a sweet sourness, giving the impression of a modern sake. The ginjo aroma is not too assertive and has a slightly yogurt-like flavor, which may be due to the sake's sake-making process. There is a sense of nama-zake and gas, and it is cohesive and delicious. The flavor of the wooden vat may be present in the nama-zake flavor, and I would like to concentrate on that next time. I think that experiencing several other brands of No. 6 yeast sake will help me to better experience the value of this one. In this respect, it is a drink that I would like to try again. Also, this time it was an x-type junmai daiginjo, but I am curious to see how it would taste with junmai ginjo or junmai.

The first kijoshu. It has a refined sweet and sour aroma and is very sweet. The color is a beautiful golden brown. If it were described as a kijo-shu, which is typical of Shinmasa, the taste would be convincing. It is a rich sake with a strong presence. I would like to try other brands of kijoshu to strengthen my axis of judgment.

This is a very hard brand to find. It is said to be made by the brewer and his sister and her husband. The previous reputation of this sake was that it was gorgeous and fruity, and the specs are also in that direction since it is an unfiltered, unpasteurized, direct-drafted sake. First of all, the aroma is gorgeous. It has a fruity aroma and tastes sweet and gorgeous like pineapple. You can drink it like a juice. I could tell that it is a very flamboyant and sharp sake. It's a Fukuoka sake, and they call it Rokuugo because it's made from 65% locally milled rice. Kyushu has a shochu culture, but Fukuoka is said to have a relatively large number of sake breweries. Perhaps it was because I had just had a strong, hot sake at an izakaya (Japanese-style bar), but I felt this sake was very non-habit-forming and suitable as a food sake. It is a sake from Kagawa Prefecture. This is the sake recommended for warming up. The label is classic and quaint. The taste is also very classic and classic sake. When heated, the deliciousness of the rice is enhanced. It's not bad at room temperature, but I think it tastes best with hot sake and warm food. I had it with corn kakiage, and the sweetness matched well with the food. I think that sakes that are good for heating up are more attractive when served with food. This is another sake I got at an izakaya. There are many kinds of sake in Hiroshima, but I have not had much luck with them, and it has been a long time since I have had one. Amego no Tsuki is said to be made with very soft water. This one is 13% alcohol, which is a bit low for sake. The aroma was quite nice, and when I drank it, it had a melon-like sweetness. The waiter said it was a refreshing sake, but to me it was sweet and tasty. I think it is similar to the Tokachi sake I drank before. When drunk cold, it is sweet but refreshing. It would certainly go well with white fish sashimi and carpaccio.

Kamikawa Taisetsu Brewery is a newly established brewery in Kamikawa Town at the foot of the Kamikawa Mountains in Hokkaido. It uses Hokkaido rice and I wanted to try it once. I had a Junmai sake, which tasted fruity without any cloying taste. It had a melon-like sweetness and aroma. It was a refreshing type of sake, and I did not notice any bitterness.
