The first try of the newest Shinmasa No. 6.
The aroma is elegant and gorgeous with a sweet sourness, giving the impression of a modern sake. The ginjo aroma is not too assertive and has a slightly yogurt-like flavor, which may be due to the sake's sake-making process. There is a sense of nama-zake and gas, and it is cohesive and delicious. The flavor of the wooden vat may be present in the nama-zake flavor, and I would like to concentrate on that next time.
I think that experiencing several other brands of No. 6 yeast sake will help me to better experience the value of this one. In this respect, it is a drink that I would like to try again.
Also, this time it was an x-type junmai daiginjo, but I am curious to see how it would taste with junmai ginjo or junmai.
