Looking back at the year 2023. We had it at "Ureshii Waramasa". Bikuyo Special Junmai Summer Sake" Special Junmai Summer Sake [Hamakawa Shoten, Kochi]. Hmm? Too refreshing? I thought it would be a slightly sweet, refreshing summer sake..! But it's different when you drink it with Sashimi, isn't it? When you put Sashimi in one cheek, and put this in your mouth... it's a wonder, it's turned into a refreshing SASHIMI with a little sweet aftertaste. It leaves a sweet aftertaste.

It is like water at the beginning, but it has a slight flavor in the middle. But in the middle, it has a slight sweetness and depth. I don't know what you mean by "heavy" since we are talking about taste, but it lingers in the mouth as a lingering aftertaste. It's interesting. Also, Shirokuma is cute.

It is accented by a slight, hidden bitterness of the sake. The bitterness spreads and dissipates as the flavor fades away. It does not disappear all at once, but it can be described as a refreshing taste.

Looking back at the year 2023. We had it at "Ureshii Waramasa". Igarashi Natsu-meku Junmai-shu" 4BY unfiltered, unadulterated, raw sake straight from the bottle [Igarashi Sake Brewery, Saitama]. It has a lactic or sweet and sour taste at the mouth, but the taste itself cuts through quickly. The astringent taste of the sake intensifies before the taste is cut off. It is a little different from a refreshing type of sake. The astringency of the sake lingers in the mouth for quite a long time. According to my partner, it is "sweet and sour and astringent. What the heck is that?

同じ週に別のお店で、冷やと燗を飲んだんですが、その違いが面白かった。 燗は、正直、全然イメージがなかったんです。 でもお店でおすすめされてて、その意外性の誘惑に負けて注文。 燗にすることで、旨味がよりストレートにガツンときます。新たな魅力を発見。 でも、どちらかというと冷やの方が好きかな。 満足度：★★★★ .
