The one I drank long ago and didn't give it to him. Tomikyucho from Hiroshima. It's written "Otoko-tachi" in Shinbashi 🍶 The gentleman on the label doesn't look like Shinbashi, nor is he an oyaji ‼️🤣 The inside is more on the modern side as well.

The one I drank long ago and didn't give. Junmai sake from Musical Instrument Masamune. You can't go wrong with any sake from Oki Daikichi Honten, not just the Musical Instrument Masamune 😃.

The one I didn't drink and give him a long time ago. Sake from Sado Island. Simple and elegant label. Some people might say it is not interesting...^^;. Like wine, labels are important. A brewer who is particular about the label is also particular about the contents. I learned something on this day. The white snapper. It is said to be the most delicious tropical fish in the world. I still need more training?

The one I didn't drink and give him a long time ago. It is 100% Akaban Omachi sake. No indication at all on the front: ‼️ It's really modest... 😃 Most of the breweries use Akaban Omachi Omachi! I'm sure every brewery is trying to show off that they use Akaban Omachi Oumachi. This sake is called Yuki Shuzo from Ibaraki, but it is made by Sanzen Sakura Shuzo from Hokkaido. Why? I didn't know that they buy sake from other breweries and sell it.... I didn't know that.

On the last day of the three-day weekend, we drank at home a collaboration sake of SENKORY and Imaya ‼️, which is a version of Kabutomushi, a noble brewed sake. It is sweet, but not heavy or sticky due to the acidity and low alcohol content, which is typical of Sentori. It is best to drink it cold🙆⭕️ This is delicious.

Two Rabbits Sparkling. I carefully opened the bottle by loosening and tightening the screw cap. I was able to do it without overflowing without any problems 😃. It's a little bit cloudy, but it's not too cloudy. It has a sweetness and flavor, but the gasiness is so strong that you can easily drink it without hesitation. By the way, the alcohol content is 14 degrees. It is a little low. Ni-Utsuri is still good.

Michelin-starred Sushi Matsumoto in Itabashi, the sixth and last 🍶. It's been a long time since I've been to Loman. I used to love drinking it when I first started drinking sake. I remember Romain as a very sweet sake made from mochi rice with a four-step brewing process, but this one is quite good with a restrained sweetness 😆.

Michelin-starred restaurant in Itabashi, 5th in Sushi Matsumoto 🍶. This is my first time to see Aizan on a pack tag. The explanation on the back label says Aizan was popularized by Takagi Sake Brewery. I didn't know that.... Sake Mirai is a sake rice developed by Takagi Shuzo, so Takagi Shuzo is really great. This one is the best of the day with the Yoshida Brewery. It is just barely sweet enough not to interfere with the meal. It has a very good balance of various elements such as sweetness and acidity. I like all of the sake brands, but I think this one is the best.

Michelin-starred restaurant in Itabashi, 4th 🍶 at Sushi Matsumoto. Isobojiman is a famous sake brewery in Shizuoka. It is no exaggeration to say that today's Niimasa is possible thanks to Isobojiman. I like how they use Tojo's Yamada Nishiki but don't show it off at all. ❓️ Every brewery writes "Tojo Yamada Nishiki" on their website! It seems to be a bit sweet for Isobojiman. And if they didn't say it was a honjozo, I wouldn't know it was an aruze.

Michelin-starred restaurant in Itabashi, 3rd 🍶 at Sushi Matsumoto. Yoshidagurau, another brand of Tedorigawa, is a light, slightly effervescent sake. The alcohol content is 9 degrees Celsius. I thought it was low, but I didn't expect it to be this low. I was surprised to see the back label. It may not be a good way to describe it, but it looks like Shinmasa. This is delicious. It might be the best today. I was torn between this and Kafuda, although they are different types. I don't have to decide the number one.

Michelin-starred restaurant in Itabashi, second in Sushi Matsumoto 🍶. Kangiku's OCEAN99 series. Whenever I drink Kangiku, I always wish it had a little more acidity. It's just my taste...^^; I think this type of sake would be better with more acidity. It is just my taste.

Tonight is Shinsei's Nirvana tortoise. It is low-pasteurized and yeast-free. ❓🤔 But Shinsei also basically uses Kyokai No.6 yeast, so they want to make a difference when they don't use cultured yeast ❓ I don't know anything about brewing, and anything is fine if it tastes good, but I am curious about something. So, Nirvana tortoise. The acidity is low for a Shinsei. Maybe because of that, the sweetness stands out and it feels heavy for its strength. I remember that the Nirvana Kame which I drank before was lighter 🤔 Maybe it is the difference of the lot.

Summer excursion Day 2. We moved from Oku-Nikko to Karuizawa. Speaking of Shinshu, buckwheat noodles are the best! So we went to Seireibashi Kawakamian. The second was Seimasamune. This is also the first time I have heard of this sake in Shinshu. It has a gorgeous taste and aroma. This is good. I also had another sake from Suwa called Mikotsuru, but I don't have a picture of it, so I omitted it!

Summer excursion. We went to Nikko Yumoto Onsen and enjoyed the hot spring. Unfortunately, the weather was so bad that we went directly to the hot spring resort without any sightseeing 🤣 I wonder what the weather will be like tomorrow. So, we had a local Tochigi sake with dinner. I drank the same sake last year, Sawahime's Kasumi Sake. It has a gaseous taste and even though it has a high alcohol content, it is easy to drink.

The birthplace was quickly emptied and I got another bottle ‼️ This is also the first sparring I've had from my favorite Senkin. Second fermentation in the bottle is just like Champagne 😆. I carefully opened the bottle, opening and closing the lid to avoid spilling. Pouring it into an Edo faceted glass, I found it to be nigori sake! I think putting nigori in a faceted glass spoils the beauty of the faceted glass.... I should have chosen a wine glass.... The schwashiness is milder than I expected, and not much different from the sanshin that does not call itself sparring. The taste is stable and delicious, as if it were Senkin. I saw a video of the brewer talking about it on YouTube. I don't know the details, but 🤣.

A red birthplace. Sake rice called Kako. Kako" is "Kabashiko". I can't read it. It's a very typical saké. It's also a very easy to drink sake with low alcohol content. As I expected, I had to go for another bottle of sake because it was empty even though I still had some left over. ‼️🤣. I always think selfishly that Sansho would be perfect for me if it had acidity.... It's still one of my favorite sakes, though.
