Asamatake" is my personal favorite brand.
The sake I have had in the past was still hard and unopened right after it was sealed, and its true flavor was revealed after 2 to 3 days had passed, but this sake was delicious right after it was sealed.
The sweetness is felt at first, but the acidity follows later, making it a very crisp sake.
