Recently, drinking sake with sakekasu as a snack has become my boom.
Tonight, I had some Junmai Daiginjo sake lees from Hakkaisan, so I paired it with the same Junmai Daiginjo sake.
Until about 30 years ago, when "Jyushidai" first appeared on the market, there was a boom in the popularity of neat and dry local sake in Niigata, and Hakkaisan, along with "Echino Kanbai," "Jigarizuru," and "Yukinakabai," was a very difficult brand to obtain.
Nowadays, Hachikaiyama can be purchased in supermarkets and has become a familiar sake, but when I tried it again, I found that it is still very easy to drink with a clean, dry taste.
