Miyakanbai Junmai Ginjo Oorigarami 55% 15% 720ml 1760yen Miyakanbai won the first prize at Kinshokai before. It had a great impact on me. I saw it at a liquor store and bought it. It has a slight orization. It has a fruity aroma and is gorgeous. The fruitiness is not necessary for me, but it is somewhat elegant. It has a strong acidity and umami, and it is very good in a wine glass. The rice used is Miyamanishiki grown in the company's own rice fields. Houou Seitoku Junmai Ginjo Genshu 16% 60% Maikaze 720ml 1504 yen Purchased at a roadside station in Amaraku, Gunma Prefecture. To be honest, I did not have high expectations, but the taste made me think I might like it a lot. It has a strong rice flavor, soy sauce, a Japanese flavor like rice bran, and a gentle fruity sweetness. The tangy taste? Some people may be bothered by the "mash" taste, but it is a very unique taste. Maikaze from Gunma Prefecture is used. Gunma 227 yeast is said to produce a rich and gentle finish. When it was first developed, it was difficult to dissolve the rice, but in recent years, the yeast has been changing or has adapted well. I am speculating, but I think it would be better to choose this yeast over others. I'm just making a judgment based on the label. But I recommend this one. Shoryu Horai Kimoto Junmai R3BY Awa Yamada-Nishiki 75, 17% 17%, 75% raw sake 720ml 1650yen Wow, I honestly licked it. I had a bad impression of this after drinking a fire-brewed Zanso Hourai, but that has completely changed. Shoryu's nama is amazing. First of all, the freshness of the mouthfeel. The spiciness is +5, and the sweetness is fruity with a hint of bittersweetness. The sweetness is fruity with bitterness, and the fruit and lactic acids give the sake a unique strength. It has a great sense of being made directly at the vat. The yeast is my favorite No. 7. My favorite Kanagawa sake is Matsumidori and Sagaminada, but Shoryu has also been added to my list. You can buy this sake at the souvenir shop of New Chitose Airport. It is one of the best quality sake at the airport in Japan. I had already had this spec three years ago and gave it a very good rating. It is light and refreshing, and it is hard to believe that it is nearly 18 degrees C. The rice, "Comet," is a type of "comet" that is used in sake production. The sake rice, "Comet," gives the image of a refreshing sake. The brewery says that this sake was created with the hope that even one out of ten people would love it. The first sip after opening the bottle. It has a great umami! Sweetness and acidity like apricots. The depth of the flavor makes you wonder if this is the result of advanced low-temperature aging. The aftertaste is also pleasant and lingers on. Yuki no Bijin Autumn Shiboritate Nama Sake Junmai Ginjo 50% 15% 720ml 1760yen At the end of last year, I received a bottle of sake from a friend in Akita. As the name suggests, this sake was pressed in autumn, not hiyaoroshi. This is the strength of being able to brew in all four seasons. It has a nice crispness and gas. The freshness of the sake, as if it had 4 or 5 drops of orange and green apple in it, is very refreshing and defies the expectation of an autumn label. The yeast is brewed in the brewery and is called "Kanazawa yeast" (brewery culture No. 14), but does that mean it is cultured in the brewery? I wonder what happened to the yeast after the disaster. The brewery's sales office had a rather upscale and stylish display. The first sip after opening the bottle at home. I drank it cold. It has a very nice fruitiness. Harmony of the richness of hiyaoroshi and the complexity of yamahai. It has a bitter taste with a nutty flavor. When it reaches room temperature, it becomes fuller and richer.
