Memorandum of December 1 I look forward to Nabeshima "NEW MOON" every year. When this sake is served, I realize it's finally winter 😂 lol Opened the bottle immediately. Pop! Nice sound. Nice bubbles ✨ when poured into the glass. The aroma is fruity and elegant, characteristic of Nabeshima 😊. Sourness, umami, and sweetness are well balanced in the mouth. The acidity, umami, and sweetness are well balanced in the mouth! There is a slight chili sensation on the tongue. Fresh acidity and fruity sweetness and umami. It's good this year too ✨It's the best! I feel like one bottle of this sake is not enough every time 😅. I will buy 2 bottles next time😊. Thanks for the treat 😋.

Kikuhime Yamahai Junmai Sake from Ishikawa Prefecture ✨! The sake bottle and cup are from Hasami-ware Hakusan Pottery. First, at room temperature. Golden color when poured into the cup ✨. The aroma is mellow and reminiscent of caramel. When you take a sip, you will feel the acidity and the rich flavor! The aftertaste is surprisingly refreshing 😊. Then enjoy it at different temperatures. Personally, I prefer it hot-warmed for the aroma and umami to spread out. Delicious! I miss this kind of mellow sake in the cold winter! Tenzan Sake Brewery, Ogi City, Saga Prefecture, a staple of autumn sake Shichida Shichiromoto Hikari Omachi Hiyoroshi (Hiyori) The Shichi-Wari-Gobun-Higashimi series is brewed to pursue the true flavor of the rice. The aroma is fruity with a sense of maturity. The mild umami and acidity typical of Omachi spreads to the palate. The taste is a mild flavor and acidity that is typical of Omachi, followed by a slight bitterness that stimulates the tongue. The umami is firm! It's so good! Junmai Daiginjo Miyanomatsu" from Matsuo Shuzo Brewery in Takeo City, Saga Prefecture. Congratulations again on your award: ㊗️🎉 This time we will be serving the Junmai Daiginjo that won the grand prize. The nose has a fruity aroma reminiscent of pears with a hint of ginjo. In the mouth, it has a freshness, but also has an elegant flavor and sweetness. The palate is fresh, but also has an elegant umami, sweetness, and a hint of acidity. The exquisite balance is the best 🥹. The flavor is gorgeous with a strong umami taste ✨. Really delicious 😋. I especially love Miyanomatsu for their nigori sake. October 20 memorandum Actually, I had a big turning point last year. I received this sake🍶 from a junior colleague to celebrate. I had been saving it for a long time and missed the chance to drink it. I will drink it when the time is right 😊. I haven't drank Otter since 40.5%. The aroma is a gorgeous, sweet image of ginjo aroma, Elegant and smooth on the palate, Then the gentle umami and sweetness that spreads on the palate. This clarity is delicious. No wonder it has so many fans ✨. I can't really buy it myself because it's so expensive. I want to drink it again 🍶. Thank you ✨

Memorandum of October 14 This season has come again this year. Koei Kiku's first series of Tsukikage (divine power) shipped this season. I remember the first Koei-Kiku I ever drank was also a Tsukikage. This was the sake that got me hooked on the sake swamp even more 🍶. I still remember that impression 🥹. I opened the bottle while remembering this past experience. The aroma is mild, reminiscent of lactic acidity typical of Koei Kiku 😂. (I always get ❓ when I write this 💦) In the mouth, there is a slight gasiness followed by a firm acidity. Then gentle umami and bitterness spreads. The image is surprisingly sharp. As the temperature rises, the flavor becomes more complex. Delicious 😋. It's still delicious when you let it sit for a while and drink it 😊. Personally, pour it into a glass, I personally prefer it when it's been at room temperature for a while ✨. I'm looking forward to the new sake coming out soon! Thank you for the food 😋.

Memorandum of October 14 Sake received at my wife's parents' house 🍶. Hiyoroshi by Oyama-san, a nice to meet you. This sake is made by Kato Kahachiro Sake Brewery in Yamagata Prefecture. It is brewed with Dewa Tsanzan and Dewa no Sato sake rice. Dewa Tsanzan and Dewa-no-sato. When I heard the name "Dewa Sanzu," I thought of that sake. Well, how does it taste? The aroma is fruity like muscat, The gentle umami of rice and acidity are well balanced, It finishes with a kick ✨. It has a light image with a strong umami 😁. At a certain hotel in Nagasaki Prefecture. Only available in Nagasaki and western Saga Prefecture (supposedly). Sake sold exclusively at the Elena supermarket. I was so excited because I didn't know they had a 300ml version. I couldn't help but exclaim "Oh! I said out loud 😁. I don't need to tell you how it tastes. Fruity aroma reminiscent of fruits. It also has a gentle acidity. firm juicy flavor and mild sweetness ✨. I think it's about time for the nama sake to be available. Ikijima on the label is blue for the nama-shu. As an aside, The lobster samadai at this hotel was the best 😂. I've only been to buffet hotels recently. I was once again impressed by the wonderful course meal 🥺. There was also a variety of sake, but it was too expensive for me to afford 💦 lol Thank you for the food 😋.

October 6 memorandum Sake from Mori Sake Brewery in Hirado, Nagasaki. A sake filled with many thoughts 🍶. I was fortunate enough to purchase it😊. The taste is of course great! Gentle sweetness and acidity reminiscent of pears and muscats. The rice flavor also spreads well and there is a bitterness at the end. A roaring deliciousness 😊. Sake rice is "Nikkomaru" from Nagasaki prefecture, polished to 65%. The yeast is Association No. 6 and it is made using a traditional sake yeast. Thank you very much for the treat! The following quote Oretachi no Hiran" is the one and only sake that was born after a high-profile SAKE kurafan project that achieved 1,060% of its goal, 110 owner plan investors (134 total supporters), and 3,181,000 yen in investment. September 8 memorandum. Another autumn sake, Higashitsuru no Jitsuri ✨. This sake is made by the Higashi Tsuru Sake Brewery in Taku City, Saga Prefecture. It's a fire-brewed version of "Aoao" 😊. I went to the liquor store to buy a chilled one. This one should be served at room temperature or lukewarm. The aroma of the sake's traditional sake yeast yeast yeast is delicious. I went home and opened the bottle. Although it is fire-aged, it has enough gas to give it a pleasant acidity and The pleasant acidity and the umami of the rice spread 😊. The aroma is even more pronounced when warmed to lukewarm. It is too delicious 😭. I thought I prefer Higashitsuru to be drunk well chilled, but I shouldn't be so sure. I shouldn't make assumptions😅.
