It has acidity and a dry feel, but the umami spreads and finishes well. I couldn't find any later details in my research.

It was refreshing, but the acidity was a little strong. If you drink it after a few days, the sourness will settle down and it will taste even better. Today, I heated it to lukewarm (about 40°C) and drank it with gingerbread. It has acidity, but it also has a slightly dry taste, and the umami and sweetness spread afterwards, making it easy to drink.

It has a strong acidity characteristic of rice wine and a dry taste. The dryness is unique to Hanafukuyuki. The first time I drank Jyushiyo in half a year, I had never had it before, so I ordered it immediately at a sake bar in Aomori City. The regular price is about 4,000 yen, but since it was purchased on Rakuten, it is 5,000 yen. I am glad that I was able to finally purchase it because it had something to do with Jyushiyo. It is easy to drink and has a good balance of acidity, rice sweetness and umami. 👍️

1.8L, 3,600 yen, 18% alcohol by volume, 100% Aomori rice, 50% milled rice, Today we had Ando Suigun Junmai Ginjo Shiboritate from Ozaki Shuzo in Ajigasawa City, Aomori Prefecture. It is easily available at liquor stores in the Tsugaru region of Aomori Prefecture, but is rarely sold in the Nanbu region, so I was lucky enough to get it. When drunk chilled, it has a strong dry taste, but when drunk at room temperature, the dry taste is suppressed and the rice flavor is enhanced.
