Cooked rice, mushrooms, yogurt derived from mountain waste, sour cream, fermented butter and aged cheese.
The first impression on the palate is rather strong. Sweetness, roundness and acidity, and bitterness, giving a full-bodied taste. The balance is rich, thick and powerful. It has a long finish.
It is made from 100% Yamada-Nishiki rice grown in Yoshikawa-cho, Miki City, Hyogo Prefecture (Special A district). Polishing rate is 70%.
This massive texture is a characteristic of Yamada-Nishiki.
Yamabai has a dairy-type aroma.
