truewaveI've always been curious about Tsuchida. I've been following it because the taste changes a lot in a month. The first day I can feel the aroma of lactic acid and mirin-like flavor. At first, you can feel the sourness, but later on, you can taste the strong flavor and bitterness. It has a strong taste, but it also has a bitterness, so it is different from the sake. The 3rd day Compared to the freshly opened sake, the richness has faded. The aroma is still the same, but the acidity is more pronounced and the umami is calmer. 1 week The aroma is still the same as before. The acidity starts to settle down and the raisin-like taste appears. Later on, the bitterness comes out, and then the sesame taste and the savory taste come out. The taste is still there, but it is different from the first day. Week 2. The same raisin-like taste as last week. Compared to last week, the acidity and the umami have calmed down a lot. It is much easier to drink than when it was just opened. 3 weeks The intense umami of the first day is gone, and instead Instead, it has a strong acidity and bitterness. 1 month You can feel the mild umami, the sweetness of the rice in the middle, the acidity later and the sharpness at the end. It is not a raw sake, but the change of taste is amazing😳.

truewaveI couldn't get the agency start and bought this instead😊. Made with Koshihikari rice from Namie town. The taste is soft rice sweetness with a firm bitterness that finishes the flavor. It's good enough in its current state, but I think it would be even better if it was left for a while or heated up. I read in this year's dancyu that you are going to make sake again in Namie town, and I was really looking forward to it! If I see it again, I will buy it and hope I can support it in some way!

It's a Junmai Daiginjo, but it's not only beautiful, it's also tasty😊. It's a bit of an aside, but it's my birthday today so it was worth the splurge👍.

truewaveThis is a different brand from Hanaboe. This sake is made from organic rice grown in Nara prefecture. The color is a little light yama-buki. The aroma is a little vinegar-like sourness and grain-like. It tastes like syrupy sweetness at first, then a little graininess, and finally acidity and sharpness slowly come up. If you associate it with Hanaboe, you may be surprised to find that the acidity is similar but the taste is different. This is a delicious flavor in its own right😊.

truewaveThis sake is made with Yamadanishiki and Nara's unique bodhi-ganjo style. I've been curious about this sake for a while, but it was hard to find and finally I was able to buy it😊. It tastes like a yogurt at first, then the bitterness follows and finishes the taste, and finally you can feel the tingling of the acid. The refreshing acidity and the slightly low alcohol content of 14 degrees gives it a lightness. There is an image that Bodhisattva has a strong taste, but this taste will make you change your mind.
