At first, you can feel the sourness, but later on, you can taste the strong flavor and bitterness. It has a strong taste, but it also has a bitterness, so it is different from the sake. The 3rd day Compared to the freshly opened sake, the richness has faded. The aroma is still the same, but the acidity is more pronounced and the umami is calmer. 1 week The aroma is still the same as before. The acidity starts to settle down and the raisin-like taste appears. Later on, the bitterness comes out, and then the sesame taste and the savory taste come out. The taste is still there, but it is different from the first day. Week 2. The same raisin-like taste as last week. Compared to last week, the acidity and the umami have calmed down a lot. It is much easier to drink than when it was just opened. 3 weeks The intense umami of the first day is gone, and instead Instead, it has a strong acidity and bitterness. 1 month You can feel the mild umami, the sweetness of the rice in the middle, the acidity later and the sharpness at the end. It is not a raw sake, but the change of taste is amazing😳.

truewaveI couldn't get the agency start and bought this instead😊. Made with Koshihikari rice from Namie town. The taste is soft rice sweetness with a firm bitterness that finishes the flavor. It's good enough in its current state, but I think it would be even better if it was left for a while or heated up. I read in this year's dancyu that you are going to make sake again in Namie town, and I was really looking forward to it! If I see it again, I will buy it and hope I can support it in some way!

truewaveThis is a different brand from Hanaboe. This sake is made from organic rice grown in Nara prefecture. The color is a little light yama-buki.
