I've been following Tsuchida for about a month now, and I've heard that it turns into something more when kept at room temperature😊.
No heating, all cold.
Opening day
The aroma is a light caramel, honey and quince-like scent.
At room temperature, it has a soft flavor and a maple syrup-like taste, but it also has a sharpness.
Day 5
The gorgeous aroma has calmed down a bit.
The sweetness has disappeared a little, and the umami and acidity have increased.
As the acidity comes out, you can feel the sharpness more.
11th day
The aroma is a bit like Shaoxing wine.
The taste is sweet, sour and sticky, like prunes or raisins.
After that, the sharpness comes out.
One month
The aroma is still Shaoxing wine.
The taste is the same as on the 11th day.
Compared to the Shin Tschida, the sweetness of the wine will disappear after a few days, but the flavor and acidity will increase.
Tsuchida changes differently depending on the sake, so I hope you enjoy it over a long period of time😊.
