Mikotsuru's active limited edition sake. It is an activated nigori sake made from Yamae-Nishiki. It is an excellent sparkling sake with carbon dioxide gas from the bottle fermentation process, and each fine bubble leaves a pleasant dry sensation on the tongue. It was delicious! I will be back next year!

I drank ZAKU for the first time. I can't explain it well, but it was the first time for me personally. The aroma is full and lychee-like, just like the description says, and it goes down your throat very nicely. The aftertaste is very sharp, so it goes well with food and is an all-around great sake.

Nigori sake from Kuroemon XVI. Be careful opening this one! It will pop. The sake itself is cloudy with a small amount of moderate gas. The taste is rich and fruity, the aroma fresh and very delicious. Repeat purchase is a must!

I have always wanted to drink the classic Sentori, Mukonin. It was my first time to drink it, and it was very good! Personally, I think it is a mellow and aromatic version of Sogapère Eiffice, which is like a combination of sake and white wine. It goes well with food and is great as a food wine. It is also very cost effective.

Yamazan Sake Brewery in Ueda, Shinshu. Sake brewing had been difficult for a long time, but it was restarted by the successor of the business. This is a light nigori, unfiltered, unpasteurized sake. It is a classic junmai sake that combines the refined rice flavor of Hitogokochi with a fruity aroma, acidity, sweetness, bitterness, and other complex flavors, and has a lingering aftertaste that easily relaxes the palate. Very tasty! This sake is probably not distributed nationwide at this time. The label is simple but very stylish!

This sake is probably only available at some liquor stores in Ueda City. This sake is made by the Tozawa Sake Rice Project in Sanada, Ueda City, and is a type of sake that I have never had before. I can't describe it well, but it is delicious. The aroma is fresh, as is typical of nama-shu, but very restrained. The first sip is also very refreshing, like water, but the final umami flavor is present, making it very easy to drink and delicious. The aroma is also very good, and it goes down very well!

Shinshu Kamerei has become a popular sake in Ueda, Shinshu. The production is small and it is quite difficult to obtain, but I got a bottle of Sanke Nishiki, an unfiltered, unpasteurized sake. It is really delicious. It has a sweet, fresh, fruity, and rich mouthfeel. The aftertaste is refreshing and you can go on and on. It would be great if it were more available.
