I didn't know until I visited Koyama Shoten today that it was Sake Day, so I opened a bottle of Jyushiyo, which had been chilled in its box.
As soon as the bottle was opened, the aroma of Jyushiyo filled my mouth with anticipation.
In the mouth, it has a fruity aroma and sweetness, followed by a moderate acidity, and it cuts through easily with no bitterness or sawdust smell. It is delicious! I could not help but exclaim, "It's good!
The aftertaste is green melon. There are many melon-like sakes, but I reminded myself that this is Jyushidai.
If I were to describe the taste in terms of color, it would be emerald. This is an image common to all Jyushidai.
Compared to the Dragon's Bastard, it is a little less sweet and a little less acidic, a little more sharp, and a little more suitable for adults.
Nevertheless, it has sufficient sweetness, acidity, and umami.
It is delicious as a mealtime sake, but should be enjoyed purely as a pre-dinner drink.
