Not much of an aroma when you open the bottle.
If I had to say, the aroma is a little bitter.
In the mouth, there is little aroma, but a strong sweetness and sourness, and finally a strong bitterness and sawdust smell that lingers for a little while.
The sweetness and bitterness give the impression of red melon, but it is very strange.
It is delicious, but the bitterness and sawdust smell in the aftertaste is bothersome.
The "sawdust" smell is even stronger when served as a food sake.
I tried Morishima, which I had been curious about in a previous review of Sake-no-Wawa, but I got the impression that it is not recommended for sake beginners.
It was not to my taste, but I could not think of any other sake similar to it, and I felt inclined to support the brewery as it seems to be going its own way.

Changed the rating on the third day as the sweetness and acidity increased and the bitterness and sawdust smell decreased to my liking.
Impression like San Fuji apple. Light bitterness after the sweet and sour feeling.
Surprised at how much the taste can change even though it is fire-roasted.
