What a great and difficult sake. It is very gentle on the palate, with a calm taste and a quiet echoing aftertaste. It is very good to drink with a gentle meal, a simple rice dish with chirimen furikake, but I think it is also good to savor it on its own.

It goes perfectly with bonito tataki. It also went well with tofu miso soup with less miso. It also goes well with rich foods such as tomato falsies, which is unexpected because it has a refreshing aftertaste.

The aroma is weak for a Daiginjo when you put it in your mouth, but the Daiginjo feeling comes slowly later. Full-bodied. Quite dry. It goes well with chilled tofu, or you can go against the grain and pair it with spicy cod roe.
