This is my first time to try Omachi's Hello Koyogiku. I was impressed by the previous Yamadanishiki, so my expectations were naturally high. And the taste was just as I expected, with Omachi in full bloom. It's got the perfect amount of gas. I used to think it was similar to Number Six, but after drinking the Omachi, my impression changed again. I felt that Hello is another brand. The gasiness is outstanding, and the balance of sweet, umami, and acidity is well supported by the surroundings. I was convinced that Haro is the one I prefer to jump through the hoops at Kouyougiku.

This is my first bottle of Yamano Kotobuki. I bought it because of the package and the bubble method. And it is delicious. This is my favorite direction. I like the strong sourness, richness, moderate sweetness and bitterness. The sourness is a little strong, but it's my favorite. It's Omachi, low-alcohol, and Junmai Ginjo, which I think I would like just from the specs alone, but I like even more the way the acidity is bouncing around with the bubbling process. It made me want to try the other Yamano Kotobuki as well.

The impression is that it is strong and gentle. I think it is influenced by Dioavita, which I drank earlier, but it is a firm and full-bodied sake. It has the beautiful sweetness and umami typical of Yamada Nishiki, just as Mimuro Sugi's impression of careful sake making. Compared to the Dioavita we drank together, I think the Dioavita is more gentle and has a more robust feel.

I thought it had a strong flavor for a low ale of Yamada Nishiki. And I thought it was very tasty. As I drank it slowly, I could feel the clean taste typical of Yamadanishiki. The acidity is strong, the sweetness is moderate, and the umami and bitterness are well supported. In other words, it is well balanced and I like it very much. This is a low-alcohol, easy-drinking sake that I really like. Compared to the Jun Gin Yamadanishiki that I drank with it, it was of course easier to drink, but for some reason I felt that it had a stronger flavor.

The 3-grain series never fails to please me. Aisan is also very tasty. It has a very stable balance. It has a complex taste like Aisan. I can feel the bitterness so clearly, but I can also feel the cleanliness, which is a two-way impression. I feel like I've been given the answer to what makes Aisan so good. I would like to drink it carefully.

The last of the set of four. And my most favorite was waiting for me at the end. It is sweet, sour, mellow, and very tasty. To my taste, when I first opened it, it reminded me of Senkou's Naturals and Shinsei's Hinotori. In other words, I really like it. After letting it sit for a couple of days, the lactic acidity popped up and added a sweet and sour taste. This is also delicious. I drank four bottles of this series, and I liked them in the following order: spring, winter, summer, and autumn.

This is the third bottle. As a summer sake, it is refreshing and easy to drink. It was easy to drink and suitable for summer. However, although I could feel the sweetness and the sourness, I was not really into any of them. It seemed to be my favorite sake, but it didn't stick to me very much, which was a little unusual for me.

This is the second bottle in a set of four. Hiyaoroshi is not my favorite, and it didn't stick with me that much. It is characterized by a richness that hits you right in the throat. I felt that both the warmed and cold sake had a richness to them. It's not my favorite, but for a Junmai hiyaoroshi, it's an easy drinking sake.

I received a set of four bottles as a hometown tax payment from Nikaho City. The first bottle is a raw sake, so I chose winter. It was delicious beyond my expectations. I think it was the first time I felt the goodness of Yamahai. It is a well-balanced sake with a distinct lactic acidity and a strong umami and sweetness. I liked it a lot and drank it easily. While there is a pattern that some raw sakes are not to my liking, this one has an excellent balance of sourness and umami-sweetness, giving me the impression that it is well-balanced among raw sakes. I want to try it warmed, and it's getting harder and harder to find the right time to open the other three bottles.

It is the most delicious. I think the balance of Zijima's Special Junmai is ultimate. It is sweet and delicious, with a distinct bitterness and acidity, yet it is beautifully balanced. It may not be exactly to your liking. But if you were to ask me which is the ultimate balance in sake, I would say However, if you were to ask me which is the ultimate balance of sake, I feel that Zijima's Special Junmai would be a candidate.

It is dry. This is my first time to try Toyoga, and my perception is that it is a beautiful Junmai. There is no sweetness, and the impression is of a light, dry taste. When I warmed it up, it became my favorite. It became fuller and richer all at once. I want to try the other Toyoga as well, because I can feel the careful crafting.

I received this as a gift. It was the first time I drank it, and I enjoyed it very much, as if they had chosen something fruity and sweet based on my taste. Collage is really hard to miss. I thought that the collage would be a little out of my taste, but my fears were unfounded. Collage is still Collage. The balance of sweet and savory, and the bitterness and acidity that are typical of the collage are just right and delicious. Once again, I am grateful for the existence of Collage Collage.

This is the second Two Hares. I liked the first bottle better. From the moment I opened it, even after letting it sit for two days, it seemed to be consistently dry. I can feel the sweetness, the flavor, and the acidity, but for some reason, I couldn't get into it. I can feel the atmosphere of well-balanced flavors mixed in the mouthfeel, but I personally didn't get into this sake. I'm looking forward to the next Futaba.

This is a very tasty sparkling with a beautiful red color. It is moderately sweet and has just the right amount of gas that I find most pleasing. It was my first time to try the moon after the rain in the first place, but I would like to try more of the moon after the rain.

This is my second bottle of Haneya because it was so good last time. The first day was not as impressive as the last time, so I let it sit for a day. And I liked it very much. Raw sake is good, but this sake is more to my liking when it is allowed to settle down a bit. Haneya-san is delicious after all. It's sweet and delicious, but I have the impression that the sourness and bitterness are strong.

On New Year's Day this year, we started with a comparison of Jikin. This is the first time for me to try Kimoto, but I feel that it is a carefully made sake like Jijima. Compared to the Omachi that we compared it to, I thought that the Yamadanishiki seemed to have a different cleanliness. However, perhaps because of the Kimoto origin, Jishin's Yamadanishiki has a spine, or strength, or perhaps a gentle yet assertive character. I'm embarrassed that I was pulled in by the specs, but I was happy because I prefer it to the regular Yamadanishiki.

Since it's New Year's Day, I'm going to start drinking this year now, which seems like a good omen. First of all, it is naturally elegant and delicious. This is the first time I've had a native-production Jikin, and perhaps it's because of my preconceptions, but I felt it was a bit fierce. Compared to Yamadanishiki, which I compared it to, I have the impression that it has a strong acidity, umami, and overall taste like Omachi. And I like it. It made me happy early in the New Year.

Because it is New Year's Eve, it is Shinsei somehow. It has been a long time since I had an ecru, but this is the first time for me to have another order. First of all, it is very delicious. It is sweet and sour like a plum, and you can feel the balance of bitterness and umami. It is calm, clear, and like a fine wine. Of course, I prefer it much more than wine. I'm happy to end this year with Shinsei on New Year's Eve.

It says it is dry, but I felt it was sour and sweet like Mutsu Hassen. I'm worried because I don't have confidence in my tongue, but I thought the only thing that gave it a dry taste was the sharpness. I am glad that it was delicious like Hassen.
