The bottle started to blow out halfway through opening, and quite a lot of it overflowed.
This is indeed secondary fermentation in the bottle.
The mouthfeel has a pleasant gaseous sensation, as is typical of sparkling sake.
The taste has just the right amount of sweetness and bitterness.
It is not so light that it is easy to drink.
It is delicious with a firm umami flavor.
My preference is for sparkling sake that is a little easier to drink.
