The bottle started to blow out halfway through opening, and quite a lot of it overflowed. This is indeed secondary fermentation in the bottle. The mouthfeel has a pleasant gaseous sensation, as is typical of sparkling sake. The taste has just the right amount of sweetness and bitterness. It is not so light that it is easy to drink. It is delicious with a firm umami flavor. My preference is for sparkling sake that is a little easier to drink.

I like the mellowness and acidity typical of Aizan. It also has just the right amount of tanginess, and I feel it is well balanced. Rather than the gentle flavor described on the label, it is rich and drinkable, giving the impression of being full-bodied. It is not exactly in the middle of my favorites, but it has the Aizan character that I prefer next to Oumachi, and I enjoyed it.

This is my impression of what 40% Yamada-Nishiki should taste like. While the bitterness is deep and deep, there is also a clean, dry impression, which is a taste I have never experienced before. The mellowness that passes through the nose and the rich aftertaste are worth the price. It is not my favorite, but I enjoyed it.

No matter how many times I drink it, it still tastes great. I mean, I am thankful that it tastes as good as ever this season. I still feel that Hwangsuisen is the strongest for packaged wine. It has a clear and beautiful sweetness, just like peach juice. It has the perfect balance of strength and elegance. The low alcohol content is also very nice, and I was able to drink it with ease and comfort.

It has a fruity aroma and mouthfeel typical of Yamada-Nishiki, and has a good sake feel. However, for some reason, we did not like it either. The fruity flavor was to my liking, but I think the balance between the heavy flavor and the bitterness, which I felt rather clearly, was the reason I did not like it. For me, it is a good sake to drink a little bit at a time.

I bought it again this year. And I blew it up again this year. Unfortunately, the result this year was not to my liking. The bitterness came first, and the nigori element was stronger. I prefer the sweetness and acidity that is typical of Sengoku to be brought to the forefront a little more.

This is my favorite of all the Kuheiji I have had so far. While it has a clear sweetness and umami, it is easy to drink with a refreshing, clean taste that is typical of Yamada-Nishiki. I like both the gorgeous sweetness after opening the bottle and the umami after drinking it slowly for a while. I wonder if it is only famous sake breweries that have strength in their standard products. It was delicious.

It has the right amount of sweetness and acidity while also being mild. It seemed like something I would like, but strangely I was not hooked. I can't analyze why I didn't like it, but it didn't appeal to me. I tried heating it up, but it didn't hit me either, which is strange. However, I am very grateful to receive this set as part of my hometown tax payment.

This is the first time I have seen the Setsuwakamaru variety. I've also never had Hyper Nova before. I think the label is pulling me in, but the balance is great. Starting from the aroma, it is sweet, delicious and tasty. It is also clean and refreshing for an Eiko Fuji, which again leads to good balance. This is my first time drinking Setsuwakamaru, but the balance makes it feel like Yamadanishiki. I tried it warmed, and it wasn't bad, although I prefer it hiya.

It is juicy and delicious. I like its umami, sweetness, and acidity. I feel that it is a sake that perfectly expresses the goodness of orikara-mi. Kangiku-san never fails to deliver. I often drink it at the store, but if I find it, I will buy it from now on.

I thought it was sweet and tasty, typical of Eiko Fuji. The bitterness and acidity are moderate. The aroma is mellow and full. Although it is a junmai daiginjo, the strength of the flavor is very strong. Because of its richness, I tried heating it up, and it was the right choice. It has a fluffy and broad flavor, which I like even more.

The bitterness is rather firm, and the sweetness is moderate and dry. In other words, it is not very Eiko Fuji-like. And I don't like it that much. However, that does not mean it is not tasty, and I am impressed that it has the atmosphere of a dry white wine. I will let it sit for a while and see how it goes.

It has a beautiful mouthfeel. On the first day after opening, there is a bitterness, which is typical of a fresh sake. It has a beautiful impression like a daiginjo, but it has a dry atmosphere. Two days after opening the bottle, the impression changed considerably. It is now sweet and sour, much to my liking. The bitterness and cleanliness did not change, so I thought that was the characteristic of this sake. In general, I don't like it that much, but my impression is that it is a carefully made sake.

Packaged sake and Akaban Omachi, it must be delicious. They are characterized by their firmness and drinkability. I have the impression that it is more robust than my impression of Kafuda-shu. I had an impression that it was beautiful and light, but this one is strong and thick. So, although I did not like it that much, I was satisfied to be able to taste the strong flavor of Omachi.

It is a slop. Drool is delicious. I can't gobble it down too much at a time, but it is very tasty. It's like a smoothie or yogurt, just like dobrok. It is creamy with bitterness and flavor. I would like to try other kinds.

Sentori is not a miss after all. Sparkling is also very tasty. It is sweet and sour with just the right amount of bitterness. It was so easy to drink that I finished a bottle in no time and became very drunk.

It doesn't have much of the Kouei chrysanthemum character. My personal image of Koei-Kiku is that it is beautiful, gassy, and sweet, but this one gave me a different impression. It is a heavier, full-bodied sake with a strong rice flavor. To be honest, it is not my favorite sake, but if you think of it as a full-bodied sake, I think this is what it is. When heated, the full-bodiedness of the sake broadens and becomes even more delicious.

I thought I liked it at the top level among the Kaze no Mori. I also like Omachi, so perhaps it is inevitable, but it is outstanding. The label pulls me in, but I can almost feel the strawberries. It has a strong taste of gas, strong sweetness and umami, and yet it's so wonderfully easy to drink. I love the perfect balance. I found myself getting drunk because of the 16% alcohol content. I hope they will somehow bring it back to the regular menu.

It's been a long time since I've seen Matsumoto-san. Or rather, this is the first time for Nichinichi. It is outstandingly fruity from the aroma. I was told that this is the basic version, and it is as delicious as I expected. My first impression is that it is a moderately sweet and beautiful sake, as is typical of Tojo-produced Yamadanishiki. The balance of umami, acidity, and bitterness is also exquisite. In particular, the acidity, moderate umami, and a hint of bitterness are characteristic of this sake, to the extent that it is difficult to open the bottle. I am looking forward to other days and days other than the basic one.

This is my first one. I like Sentori, but for some reason, I have been saving it for a long time. I was going to open it at New Year's, but it turned out to be at this time of the year. The aroma and mouthfeel are as you would expect from a fine Yamadanishiki sake. As is typical of Sengoku, the acidity is also very strong, which I like. I have a preconceived notion that this is more elegant than the usual SENKYO. I was satisfied with the clean and fine sake I was drinking, regardless of whether I liked it or not.
